Shrimp and watermelon rind tacos with ramps!

Yall this is crazy cool, and so delicious! Save your watermelon rind as a side dish. It tastes slightly like green tomatoes. This is the white rind that usually gets tossed.

First, wash the outside of the watermelon, cut in half. I like to cube the sweet red 'meat' so I'll slice into the melon lengthwise then sideways, and then scoop out the cubes. Then slice the white rind into 3" slices. With a sharp knife, slice off the green peel. Dry the peel to add to lemonade or tea. It has the most vitamins! Then simply dice up the white rind into half inch cubes.1

Add half a teaspoon to a cup or two of diced rind, toss to coat. Let sit for 30 minutes. Squeeze out the liquid then fry in a couple tablespoons of ramp butter or other fat. I also diced up some ramps into the pan.
I removed the rind and sautéed some shrimp in more butter. Then layered the tacos with shrimp and sautéed rind. A dollop of sour cream and parsley and you're set!

Also diced up the rind with corn, peppers, onion and cucumber with infused oil and vinegar with some ramp slat for pico de gallo. So good!!

Garlic coming up from scattered seed!  It takes 3 years as opposed to 1 year with cloves, but so great for transplanting...

Garlic coming up from scattered seed! It takes 3 years as opposed to 1 year with cloves, but so great for transplanting around fruit canes and vines for pest control AND food.. will be transplanting this weekend...
