Chicken and Broccoli Alfredo Bake
- 2 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 2 tbsp extra-virgin olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 5 tbsp unsalted butter
- 1/4 cup chopped yellow onion (or red onion)
- 1/4 cup minced garlic
- 1/4 cup all-purpose flour
- 4 cups heavy cream (or whole milk)
- 1 1/4 cups mozzarella cheese (for layering)
- 1 cup grated Parmesan cheese
- 1/2 tsp salt
- 1 tsp garlic powder
- 1 (16 oz) box rigatoni pasta
- 1 lb fresh broccoli florets
1. Cook the rigatoni according to package instructions, drain, and set aside.
2. In a large bowl, combine the chicken with olive oil, paprika, garlic powder, onion powder, and salt, ensuring even coating.
3. Heat a skillet over medium-high heat and sear the chicken for 10 to 12 minutes until cooked through, then transfer to a plate.
4. In the same skillet, melt the butter, sauté the onion and garlic until fragrant, add flour to form a roux, then whisk in heavy cream until thickened.
5. Stir in 1/4 cup mozzarella and Parmesan until melted, then fold in the chicken, pasta, and raw broccoli until well mixed.
6. In an 11x7 baking dish, layer half of the mixture, sprinkle with 1/2 cup mozzarella, add the remaining pasta, and top with another 1/2 cup mozzarella; bake at 350°F for 30 minutes until golden and bubbly.
