Happy Heart Eats Eating healthy is a choice you can SET your mind to! Satisfying, Easy to make, Tasty!!! Little did we know a huge black cloud was headed our way.

Our Story:

In May 2017 my husband and I moved to Delaware to start our retirement. We hoped our golden years would be full of travel and leisure activities, and lots of time for family and friends. One night in late December 2018, a few days before Christmas, my husband woke me up asking to take him to the hospital. He was having severe chest pains and difficulty breathing. I got him loaded in th

e car and we headed to the emergency room in the middle of the night. A few hours later I remember sitting alone on a bench in a hallway of the hospital waiting for someone to give me an update. When all was said and done, our world would be changing forever! After having a heart procedure done, he was told he would need to change his eating habits and lifestyle if he wanted to regain his health. A diet containing lots of fruit and vegetables, along with whole grains, was the recommendation. We stopped eating meat, processed foods, and certain types of seafood. We also reduced our salt and fat intake, especially from oils, and cut back on foods high in cholesterol. I have always enjoyed cooking, but a veggie lifestyle was a huge challenge for me. I was determined to learn and help my husband recover, so I SET out to create meals that were SATISFYING, EASY TO MAKE, AND TASTY! Throughout this journey, we arrived at Happy Heart Eats. I want people to know that eating healthy is a choice that you can SET your mind to!

GF Banana 🍌 Chocolate Muffins - These muffins are so good it is hard to believe they are satisfying and mostly guilt free

Ingredients
2 bananas 🍌
1 egg 🥚
1 tsp vanilla
1/4 c cocoa
1/4 c sugar
1/4 c almond butter
1/4 c GF flour(rounded)
1/4 c quick cooking oats
1/8 tsp pink salt
1 tsp baking powder
1 tsp cinnamon
Optional non dairy chocolate chips

Combine bananas 🍌,egg, vanilla, sugar, cocoa and almond butter. In a separate bowl combine the remaining dry ingredients and add to the moist mixture. Divide into muffin tin. Makes 6 muffins. Optional, add some chocolate chips to the top of each before baking at 350 for 15-20 minutes

Guilt Free Dessert

Ingredients
1 c cottage cheese
1/2 c cut strawberries 🍓
1 T Cocoa-not level
1/4 cup non dairy chocolate chips

Directions
Whip cottage cheese in food processor till smooth. Add cocoa and blend till combined. Add half of the chocolate chips (melted in microwave) till combined. Next add remaining chocolate chips and chop till broken up into bits. Last at strawberries 🍓 and pulse a few times till broken down into tiny bites. Best if you cover with cling wrap and refrigerate for at least a day or over night to thicken some. Serve chilled.

We were so impressed by the beautifully designed, spotless rooms and their full “refueling station” stocked with water, tea, coffee, soda, and individually wrapped freshly baked gluten-free cookies (a literal dream for anyone with food sensitivities!).

Breakfast was truly next-level:

🥚 a fluffy spinach & cheese quiche
🥗 a refreshing breakfast salad
🍰 a gluten-free éclair for dessert
🍊 fresh-squeezed juices for a clean, nourishing start

They’ve been featured in countless food journals, podcasts, and blogs—and it’s easy to see why. Even though we’re local, people travel from all over just to stay here and enjoy their completely gluten-friendly menu.

Oh—and don’t skip their bakery! You can take home their house-baked gluten-free treats and curated GF goods.

GF Puff Pastry Breakfast

Makes two
1 box gf puff pastry
4 scrambled eggs
2 T dairy free cheddar cheese
4 slices cooked bacon diced scallions
2 small cast iron skillets

1/4 of pastry on bottom, bacon, scallions, cheese and topped with another 1/4 of pastry. Cook at 425 for 15 min. Repeat for second one.

Easy Peasy Bran Muffins - Can we say delicious!!!!!!!
Great for fall. 🍁🎃

ingredients
1 1/4 cup GF flour
1 T baking powder
1/2 tsp salt
1/2 cup sugar
2 1/2 Bran Flake Cereal
1 1/4 cup milk
1 egg 🥚
1/4 cup veg oil

First combine flour, baking powder, salt & sugar and set aside.
Next, cover Bran Cereal and milk in a bowl and let sit for 2 min until soft, stir a few times during so all is coated. After 2 min try to smash up some. Now add in egg & oil till combined.
Finally fold in flour mixture till combined. Use a greased muffin pan. Makes 11-12 depending on size. Bake at 400 for 18-20 min.
