Tuscan Garlic Salmon with Spinach and Tomato

Ingredients:

450gr salmon fillets
2 Tbsp olive oil
1 Tbsp olive oil or butter
1/4 tsp red pepper flakes
1 tsp smoked paprika
salt and black pepper
1 tsp Italian seasoning
1 medium onion, chopped
4 cloves garlic, minced
4 tomatoes, chopped
150 gr fresh spinach
handful fresh basil leaves, chopped
60ml vegetable or chicken stock or dry white wine)

Directions:

Add olive oil to a large skillet, on medium heat. Add the salmon fillets, red pepper flakes, paprika, Italian seasoning, and salt in the skillet and cook salmon on both sides until cooked through, about 5 minutes. Remove salmon fillets and set them aside on a plate.

In the same skillet over medium heat, add tablespoon olive oil or melt 1 tablespoon butter. Add garlic and chopped onion and cook 2-3 minutes. Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and stock or wine. Cook for about 3-5 minutes.
Add cooked salmon back to the skillet to reheat quickly.

Best Baked Pork Tenderloin

Ingredients:

2 pieces pork tenderloins, trimmed (1 kg)
1 Tbsp salt
2 Tbsp apple vinegar
2 Tbsp brown sugar
2 Tbsp lemon juice
60 gr butter
1 Tbsp each - chili powder, garlic powder
1 tsp each - salt, onion powder
1/2 tsp paprika
1/4 tsp pepper
1/2 tsp each - dried parsley, basil, oregano, thyme

Instructions:

Preheat oven to 200 degrees C. Prepare two long pieces of foil – to fold up each tenderloin separately.

Mix salt with 1 liter water until dissolved. Whisk in apple cider vinegar and brown sugar. Add the pork. Brine for exactly 20 minutes (not more) then rinse and pat dry.

Whisk together all the spices (not herbs) and rub pork all over with spice mix.

Heat oil in a skillet. When hot, sear each side of pork, then transfer to foil.

Rub dried herbs into pork. Drizzle with lemon juice and top with pieces of butter. Wrap in foil.

Bake 25 minutes.
Loosen foil (so steam can escape) and let stand 10 minutes before slicing.
