I was busy being a single dad with 3 girls and a boy and cooking extravagant meals was not at the top of my list. I was putting together whatever I could to make meals stretch and keep the kids full and happy. Traveling with the US Navy, eating aboard ships, naval stations and dining at restaurants in Spain, Italy, France, Germany and other European and Caribbean dining establishments opened my wo

rld to a myriad of ethnic foods, beers and wines. It was these unforgettable experiences that my journey to collecting recipes began. When I began my road to retirement from the Postal Service, I started to look for land in Tennessee to build my dream home, a log cabin home. And, riding my motorcycle around the area discovering new places is wonderful. But something was yet to be done in retirement
besides travel and I could not quite put my finger on it. I began making meals with a smoker and that led me to look for recipes for ribs, steaks, rubs, spices and more. I spent time online researching cooking methods and meal preparations. A very good friend of mine encouraged me to cook, and for my birthday bought me spice packets, a meat thermometer (I still use it today) and other items that set me off on creating my own recipes. Thank you, Emily! I bought smoking and grilling cookbooks and my cooking world began to take shape and friends and families were soon sitting down at my table for some great meals. The rest is history and here I am today sharing my recipes with you. I will also post others recipes and I will encourage you to try each one and comment on them.
