Stuffed meatloaf 🥩🌿
(Keto/lowcarb)

-1 large onion, chopped
-3 cups of sliced mushrooms
-salt
-1 lb. Ground beef
-2 eggs
-2 tbsp of coconut flour
-1/2 cup of shredded cheddar cheese
-2 tsp of garlic salt
-2 tbsp of worcestershire sauce
-1/2 cup of gruyere cheese or mozzarella, shredded
-1/2 cup of bbq sauce unsweetened Primal Kitchen

Preheat oven at 350°F and spray a loaf pan or baking dish with oil.
Preheat a pan on high heat and add some olive oil. Add the chopped onion and cook for 3 minutes. Add the mushrooms and cook for 5 to 6 minutes stirring all the time to avoid burning until liquid evaporates completely. Turn off heat and set aside.
In the meantime mix the ground beef, coconut flour, worcestershire sauce, garlic salt, eggs and cheddar cheese until well incorporated. Fill the bottom of the loaf pan with the ground beef mix pushing it down with a spoon and spreading it well halfway on the sides of the loaf pan. Add the mushroom and onion mix (save 1/2 cup) and the gruyere. Cover with the rest of the ground beef mix spreading it very nicely and covering every side. Bake for 40 to 45 minutes.
Let sit for 10 minutes and turn on a prepared plate. Brush the bbq sauce all over it and then top with the leftover mushrooms and onions. Add some spinach on the side and slice. Enjoy each slice on top of fresh spinach or mixed greens.

It turned out so delicious and super good consistency and thickness. Make sure You eat it right after You finish plating.

Grilled octopus 🐙

This was one of the best recipes I have made and I honestly think the best way to eat octopus is grilled!!!

-1 lb. Of baby octopus
Marinade:
-1/4 cup of olive oil
-2 cloves of garlic, minced
-juice of 1 lemon
-pepper flakes
-salt & pepper
Dressing:
-1/4 cup of olive oil
-2 tbsp of chopped mint
-2 tbsp of chopped cilantro
-2 tbsp of fish sauce
-1 tsp of garlic chili paste
-juice of 1 lemon
-sliced shish*to, pepper flakes and herbs as garnish

Boil 5 cups of water and add a bay leaf. Turn of heat and add the octopus for 1 minute. Rinse under cold water immediately after. Mix the marinade ingredients and add to a ziploc bag together with the octopus. Marinate for 1 hour in the fridge. Take out the fridge and head to the grill. Grill the octopus for 3 minutes per side (can be less or can be more). Transfer to a bowl and add the dressing.
Mix well, plate and enjoy!!

Pastel azteca 🍗 🌽 🧀

Esta deliciosa receta es de mis favoritas y lo mas facilísimo de preparar!!! La has probado???

Ingredientes:
-18 tortillas de maiz, fritas en un poquito de aceite por 20 segundos por lado
-5 tazas de pollo desmenuzado (yo use un pollo de rotisería entero desmenuzado)
-1 lata grande de elote sin el agua
-2 tazas de queso mozzarela rallado (puede ser cheddar o cualquier queso de preferencia)
-3 latas de puré de tomate
-1 lata de media crema
-4 a 6 chile verde o poblanos asados, pelados y desvenados en rajas
-sal y condimentos de preferencia

Precalentar el horno a 400°F. En un refractario grande, agregar 2 cucharadas de puré de tomate al fondo. Acomodar 6 tortillas de maíz ya preparadas. Agregar un chorrito de pure de tomate, crema, pollo, elote, queso y chile verde y repetir con la siguiente capa, ya que lleguemos a la ultima capa solo agregaremos puré de tomate, crema, queso, chile y elote. Hornear por 20 minutos y al sacar del horno, dejarlo reposar por 10 minutos y servir.

Pollo rostizado al horno🍗🌿

La receta más fácil y deliciosa para perniles de pollo.

Ingredientes:
-4 piezas de pernil de pollo
-sal de ajo, pimienta y especias mixtas.
-aceite en spray

Instrucciones:
Precalentar el horno a 425°F. Preparar una hoja con papel para hornear o aceite en spray. Agregar los pollos y sazonarlos por ambos lados. Hacer cortes en el pollo con un cuchillo o tijera de cocina. Esto es para que la piel y la carne absorban mejor los ingredientes secos y rociar con aceite en spray. Hornear por 45 minutos. Acompañar con ensalada de espárragos de mi receta anterior o la ensalada de papa.

Ensalada cobb 🥓🌿🍅

Ingredientes:
-2 tazas de lechuga picada (yo use spring mix)
-1 taza de pepino picado
-1 taza de tomate picado
-2 huevos cocidos
-2 rebanadas de tocino ya preparado y cortado en trozos
-1/2 taza de pechuga asada sazonada a tu gusto
-1/2 aguacate
-1/4 de taza de queso feta
-cebolla morada
-aderezo ranch o cualquier aderezo de tu preferencia

Precalentar el horno a 415°F. Hornear la pechuga y el tocino en diferentes hojas para hornear forradas con papel para horno. Cocinar el tocino por 15 minutos hasta que esté crujiente (opcional). Cocinar la pechuga por 20 minutos y cortar en cuadritos. En un plato hondo agregar la lechuga, tomate picado y pepino y mezclar. Después acomodar los demás ingredientes en el plato. Servir con ranch o cualquier aderezo de preferencia.

Coctel de camarones 🦐

Este cóctel es súper fácil y rápido de preparar. Es un coctel de camarones muy simple pero muy rico para un dia de antojo.
Y tu como haces tu coctel de camarones???

Ingredientes:
-1 lb. De camaron pelado y desvenado hervido por 30 en agua con sal y una hoja de laurel. Pasado por agua con hielo después de cocerse.
-1 taza de pepino picado
-1 taza de tomate picado
-1/2 taza de jugo de limón
-1/2 taza de apio picado
-1/4 de taza de cebolla morada picada finamente
-2 cucharadas de cilantro picado finamente
-1 chile serrano sin semillas picado finamente
-2 tazas de clamato
-4 cucharadas de salsa de soya
-3 cucharadas de jugo maggi
-1 chorrito de salsa tabasco (opcional)
-sal & pimienta al gusto

Mezclar en un bowl chico el clamato, salsa de soya, jugo maggi, limón, salsa tabasco, sal y pimienta. En un bowl mediano agregar el pepino, tomate, cebolla, cilantro y apio. Agregar los camarones ya fríos y después el jugo que preparamos. Se puede servir con galletas saladas o tostadas, aguacate y salsa picante.
