Making apple butter from North Carolina apples today. It smells so good! I was going to sell some jars but I might just keep it all for myself 😋

My version of an apple tart. It’s kind of an apple tart pie 😂, but oh well! It’s drizzled with homemade caramel syrup.

I miss harvesting my garden. We were not able to plant a fall garden this year, but we still have some tomato’s and figs growing. I picked most of the tomato’s today and plan to sit them on my window sill so they can ripen. Our chickens are not laying as many eggs right now either. It’s been a busy and at times stressful two months!

We did get to visit Justus Orchard this week, though, and we picked enough apples for baked goods and apple butter! I’m excited to get started! What should I bake with all the apples we picked?

Our first pets were chickens. We bought 11 chickens a few months after Aaron and I were married, and we have been adding to our flock and gathering eggs ever since! Grocery store eggs just cannot compare to eggs from backyard chickens. ❤️

We usually gather 3-4 dozen eggs a week

Andrea Langley Rosbury came over today to help me make muscadine jelly with her youngest child. William had a blast playing with his cousin! I picked way too many muscadines so there’s enough juice left over for probably two more batches. I’m hoping it will freeze well for later. My grandparents used to make this and showed me how years ago. My papa is gone now, but I will always remember him teaching me how to cook in the kitchen. I hope this jelly tastes as good as the jelly of my childhood! ❤️

Our mini harvest today. Yesterday, I picked 2 liters of muscadines to make muscadine jelly. I think I finally have enough tomato’s for another batch of salsa, and I’m going to try to do something with our figs.

Persimmons are plentiful right now now but I’ve never harvested them before. Should I do something with them?

I tried a new recipe today and it is 😋🤤delicious!!! This is Squash cheese herb bread ❤️ I found it on Pinterest and just HAD to make it!! It has a biscuit like consistency so I think this recipe would make wonderful drop biscuits. This bread is made with rosemary, oregano, green onion, squash (of course), and cheddar cheese! I will definitely be making this again!

Figs are in season! I’ve never cooked with figs before, but when the Hubby asks me to do something with them, well, I search Pinterest for interesting recipes! This recipe uses Naan flatbread, goat and mozzarella cheese, basil, and basalmic glaze. 10/10 would recommend! Two different types of figs were used in this recipe. 😋

Our little Granny Smith apple tree we planted a couple years ago has really grown this year! It has given me enough apples to make apple butter, apple pie, apple crumble, and apples to give away and eat on. We have about a dozen fruit trees planted on a piece of land that used to be a garden. On it, we have different apple trees, apricot trees, peach trees, and plum trees. The frost killed all the fruit last year, but this year some of the trees have produced enough fruit to enjoy. The birds got all our peaches before we could pick them though and half our apricots. Hopefully next year will be better!!
