Simply Made Fancy

Simply Made Fancy Where simple meets fancy. Hi! I’m Angelina Mercado, a simple girl with fancy tastes. My passions are crafting, baking, cooking, decorating and entertaining.

I spend my days gathering ideas that will enable me to use my creativity. One of my favorite things to do is taking something that appears simple and inexpensive and turn it into a delightfully fancy creation.

Today we celebrate the independence of the Dominican Republic 🇩🇴 — and I couldn’t be prouder to have Dominican roots running through my veins.

The Dominican Republic gained its independence on February 27, 1844, and this day is more than just a date in history — it’s a celebration of strength, resilience, culture, and faith.

One of the most beautiful symbols of the DR is its flag. At the very center of it is the Holy Bible — open to John 8:32, which reads: “And the truth shall make you free.” That verse reflects the country’s deep faith in God and the belief that freedom is rooted in truth. The Bible placed at the center of the flag shows that faith isn’t just a part of the culture — it’s the foundation. God is at the heart of the nation. And what a culture it is. The food, the music, the beaches — unmatched.

Today, in honor of Independence Day and my heritage, my kids and I made some delicious Dominican food: tostones, queso frito, and salchichón. And let me tell you — did we enjoy our meal? Absolutely! This was way better than pizza night. 😂 There’s something special about sharing the flavors of your culture with your children. It’s more than food — it’s history, pride, and love served on a plate.

Happy Independence Day to the Dominican Republic! Forever proud. 🇩🇴✨

Love creating little moments that make my boys feel extra special 💕

This morning they woke up to the sweetest Valentine’s surprise. I had the breakfast table all set up with fun decorations, festive balloons from Dollar Tree, and a whole lot of love. Our fireplace mantel — the spot that always gets decorated for every holiday in our dinning room — was dressed up for Valentine’s Day too ❤️

For breakfast, my husband made the cutest heart-shaped waffles 🧇, I put together a cranberry drink and fruit cups, and of course set out candy and their favorite chocolates. Seeing their faces light up was everything.

I also picked up the “Food Group” series books and plushies from as part of Kohl’s Cares collection. I love that each book and plush represents one of my kids and some of the struggles they’ve walked through. It’s a sweet and meaningful gift.

Today is a reminder that God is love 🤍 Because of Him, we get the beautiful gift of loving others and being love in this world. I pray my boys always know how deeply they are loved — by us and by Him.

Not sure about you, but a cold, snowy day makes me want to bake and make something extra special ❄️🍩
A few years ago I found a recipe for air fryer donuts, and wow—total game changer. They’re soft, airy, melt-in-your-mouth delicious, and I don’t feel quite as guilty eating them since they’re not fried in oil 🙌
When we redid our kitchen last year, I got an oven with an air fryer feature, which makes it perfect for big batches of these donuts all at once. They’re a yeast donut, so they take time (and a lot of love), but that slow, cozy process is exactly what snowy days are for.
And at the end? A warm, fluffy donut paired with tea or hot cocoa… absolute perfection ☕🤍

Three Kings Day, or the Feast of the Epiphany, has become one of those quiet, meaningful traditions in our home that I’ve truly come to cherish. It’s funny to say because I didn’t grow up celebrating it at all—but somewhere along the way, I embraced it with my kids, and now it feels like it’s always belonged to us. Each year we gather for a nice, fancy dinner, lingering a little longer at the table as if we’re refusing to let Christmas slip away too quickly. I bake a Roca del Rey and tuck a tiny baby Jesus inside, and the excitement of finding Him has become a moment everyone looks forward to.
For us, this day beautifully extends the Christmas season into the new year. It gives us space to reflect on the fulfilled prophecy of Jesus Christ’s birth and the wonder of the Magi—scholars from the Far East, who recognized exactly what was taking place and followed the star in faith. What started as something unfamiliar has grown into a treasured family tradition, one that blends faith, history, food, and togetherness in the most meaningful way.

🎉🎂 Happy Birthday, Jesus! 🎉✨
We celebrate the most special birthday ever—the birth of our Savior! I made this little birthday scene with a doll I’ve had since I was a kid, a thrifted wooden cradle, some adorable stuffed animals, and of course, little party hats! 🎈 It’s the perfect way to show that Christmas is all about Him—the One who came to fulfill a beautiful prophecy and change the world forever. 🌍💖

This season isn’t just about presents and decorations; it’s about the gift of life He gave us, His love, and the promise of eternal life through His death and resurrection. 🙏🏼✨

Let’s remind our little ones (and ourselves!) that Christmas is about so much more than gifts—it’s about the greatest gift of all, Jesus! 💕👼

We baked, we build, we decorated and out came two amazing Gingerbread houses.

Entering our local library’s gingerbread house competition turned into a sweet family win 🎄🍪
We submitted two entries this year: the boys built a classic log cabin, and I created a Scandinavian-inspired cottage.
The boys took 1st place in the Family & Kids category, and I won 1st place in the Adult category 🏆✨
Now comes the real challenge… how do we possibly top this next year? 😅
