Shrimp and Grits
Full Recipe
Ingredients:
1 lb large shrimp, peeled and deveined
4 slices thick-cut bacon, chopped
1 tablespoon butter
1/2 cup chopped onion
2 garlic cloves, minced
1 cup chicken broth
1/4 teaspoon cayenne pepper
1/2 teaspoon paprika
Salt and pepper to taste
1 cup quick-cooking grits
3 cups water
1 cup milk
1 cup shredded sharp cheddar cheese
2 tablespoons heavy cream
Chopped green onions, for garnish
Directions:
In a medium saucepan, bring water and milk to a boil. Add grits, reduce heat, and simmer while stirring often for 5-7 minutes or until thickened.
Stir in cheddar cheese, heavy cream, salt, and pepper. Cover and keep warm.
In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and drain on paper towels.
In the same skillet with bacon drippings, add butter, onions, and garlic. Cook until soft and fragrant, about 2-3 minutes.
Add shrimp to the skillet, season with paprika, cayenne, salt, and pepper. Sauté for 3-4 minutes until pink and opaque.
Pour in chicken broth and let simmer for 2-3 minutes to slightly reduce and form a light sauce.
Spoon cheesy grits into bowls, top with shrimp mixture, garnish with crispy bacon and chopped green onions.
