These finger-licking cheesecake cups are the ultimate combo of zesty lemon and sweet raspberry swirls—perfect for any dessert lover!

Ingredients

1 cup graham cracker crumbs
2 tbsp sugar
3 tbsp melted butter
8 oz cream cheese, softened
1/4 cup sugar
1 egg
1/2 tsp vanilla extract
1/2 tbsp lemon zest

3 tbsp raspberry preserves

Instructions

Preheat oven to 325°F (163°C) and line a muffin tin with cupcake liners.

Ingredients

Crust:

1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
Cheesecake Filling:

16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream
Gel food coloring (assorted colors)

Directions

Preheat oven to 325°F (163°C). Line an 8x8-inch baking pan with parchment paper.
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 8 minutes, then let cool.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
Divide the batter into separate bowls and add different food coloring to each.
Pour the plain cheesecake batter over the crust. Drop colored batters on top and use a skewer to swirl.

¼ tsp salt
2 tbsp poppy seeds
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tbsp lemon zest
¼ cup fresh lemon juice
½ cup sour cream or Greek yogurt
1 tsp vanilla extract
For the Pink Frosting:

½ cup unsalted butter, softened
2 cups powdered sugar
2 tbsp fresh lemon juice
½ tsp vanilla extract
A few drops of pink food coloring
1 tbsp heavy cream (if needed for consistency)
Poppy seeds for garnish (optional)

Directions

Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Whisk together the flour, baking powder, baking soda, salt, and poppy seeds. Set aside.
In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in lemon zest, lemon juice, and vanilla.
Alternate adding the dry ingredients and sour cream, mixing until just combined. Do not overmix.

Instructions:
