Lemon Raspberry Swirl Cheesecakes Cups
These finger-licking cheesecake cups are the ultimate combo of zesty lemon and sweet raspberry swirls—perfect for any dessert lover!
Ingredients
1 cup graham cracker crumbs
2 tbsp sugar
3 tbsp melted butter
8 oz cream cheese, softened
1/4 cup sugar
1 egg
1/2 tsp vanilla extract
1/2 tbsp lemon zest
1 tbsp lemon juice
3 tbsp raspberry preserves
Fresh raspberries for garnish
Instructions
Preheat oven to 325°F (163°C) and line a muffin tin with cupcake liners.
Combine graham cracker crumbs, sugar, and melted butter. Press into liners to form crusts. Bake for 5 minutes and cool.
Beat cream cheese and sugar until creamy. Mix in egg, vanilla, lemon zest, and lemon juice.
Spoon batter over crusts, filling each cup ¾ full.
Warm raspberry preserves and swirl into the batter with a toothpick.
Bake for 18-20 minutes until just set. Cool completely, then refrigerate for 2 hours.
Garnish with fresh raspberries before serving.
