A hearty and flavorful one-pan dish that combines juicy chicken, tender vegetables, and creamy feta cheese for a satisfying Mediterranean-inspired meal.

Ingredients:

- 3 boneless, skinless chicken breasts, cut into bite-sized pieces

- 2 medium zucchinis, sliced into rounds

- 1 pint cherry tomatoes, halved

- 1 red bell pepper, diced

- 1/2 red onion, thinly sliced

- 3 garlic cloves, minced

- 1/4 cup olive oil

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- 1/2 teaspoon dried thyme

- Salt and pepper to taste

- 1/2 cup crumbled feta cheese

- Fresh parsley, chopped (optional)

On busy days, you need dinners like that, easy to make and feed a hungry bunch. so delicious, just my kind of comfort food!! 💛😍

INGREDIENTS:
1 small onion chopped
1 Tbsp. olive oil
2 8-oz pkgs. sliced mushrooms
2 cups uncooked boneless skinless chicken breasts, cut into cubes
3 Tbsp. all-purpose flour
1 1/2 cups fat-free-milk
1 16-oz package steam-in-bag broccoli florets
1 5.3-oz container fat-free plain Greek yogurt
1/4 cup light mayonnaise
1/4 tsp salt
1/4 tsp. pepper
3/4 cup Mexican style cheese blend
INSTRUCTIONS:
Preheat oven to 350º F. Spray 2-qt. casserole dish with cooking spray. Cook broccoli in microwave according to directions; set aside.
Heat olive oil over medium-high heat, add onion and mushrooms and cook until mushrooms are starting to get tender. Add cubed chicken. Cook until chicken is cooked through. Drain pan, if needed.
Sprinkle flour over chicken & mushroom mixture and stir constantly, cooking for one minute. Stir in milk. Bring to a boil and cook for 3 minutes, or until thick and bubbly.
Stir in cooked broccoli, and heat through about 1 minute. Add yogurt, mayo, salt and pepper, stirring lightly to combine.
Pour into prepared casserole dish. Sprinkle top with cheese and bake for 20 minutes, or until cheese melts and it’s bubbly around the edges. Enjoy!!

Pizza baked chicken is juicy and so flavorful! An

SERVES 4 prep time: 10 MINUTES cook time: 20 MINUTES total time: 30 MINUTES

Ingredients
4x small chicken breasts, flattened
100g (3.5 oz) of mozzarella, grated
1.25 cups (300ml) of passata (crushed tomatoes)
2 tablespoon of tomato paste
¾ teaspoon of onion powder
¾ teaspoon of garlic powder
½ teaspoon of dried oregano
½ teaspoon of dried basil
cooking oil spray
salt and black pepper
fresh parsley
optional: ½ tablespoon of granulated sweetener if you prefer a sweeter pizza sauce. (I use erythritol)
Instructions
Preheat oven to 220c, fan 180c, 425f, gas mark 7
In a bowl combine the passata, tomato paste, onion powder, garlic powder, basil and oregano and set aside.
Season one side of the flattened chicken breasts with salt and black pepper.
Spray a frying pan over a medium-high heat with cooking oil spray, one hot, add the flattened chicken breasts (2 at a time if needed – don’t overcrowd pan if not big enough), seasoned side down.
Season over the top with salt and black pepper, and spray the top with cooking oil spray.
After 2-3 mins, flip the chicken over, should be nice and golden and repeat with the other side.
Transfer to an ovenproof dish.
Top with the pizza sauce, and grated mozzarella.
Bake till cheese is melted and chicken cooked through (but still tender (approx 10-12 mins).
If you want the cheese more golden, you can finish off under the grill for a couple of minutes.
Sprinkle with fresh parsley.
Serve with your choice of sides
This recipe is gluten free friendly

Optional – add some additional pizza toppings of choice, like vegetables, pepperoni, olives, of different types of cheese (just adjust syn value for any toppings which are not syn free)

Chickpeas in the air fryer are my favorite snack! Rinse one can, let it sit out on a towel for an hour to dry, put it in the air fryer at 375 for 18 minutes, shake and continue for 4 more minutes. Immediately spritz with olive oil spray and your favorite seasonings - I used chili lime and salt! 0-point crunchy snack! Yum!

WEIGHT WATCHERS AIR FRYER EMPANADAS
3 Point Empanadas in the Air Fryer
I'm making efforts to make this group serve its purpose (to share recipes). Kindly appreciate my efforts by saying something. This helps more eyes to see my posts. Thank you.
INGREDIENTS
1 cup nonfat Greek yogurt
1 cup self-rising flour divided
2 teaspoons garlic powder
1 cup cooked protein of choice see notes
1/2 cup corn
1/4 cup salsa
pinch of salt
eggwash
INSTRUCTIONS
Combine nonfat Greek yogurt plus 3/4 self-rising flour and 2 teaspoons garlic powder.
Roll out onto floured surface using the other 1/4 cup flour.
Cut dough into 4 equal pieces. Roll out thin.
Fill each section of dough with cooked meat (see notes), corn, salsa, and salt.
Fold over, press edges with fork, eggwash (see notes)
Preheat Air Fryer at 325*. Spray Air Fryer with noncook spray.
Cook 1 empanada at a time in Air Fryer at 325* for 8-10 minutes. Flip over and cook for another 5-7 minutes. (Due to differences in altitude, brands of flour, etc you may need to cook for longer or shorter periods in time. Keep that in mind if yours are too doughy or crispy.)
