Chinese Beef and Noodle Soup
Ingredients

Makes 4 servings
1 pound beef (beef stew meat or brisket, cut into chunks)
1 tablespoon ginger (sliced)
1 carrot (sliced)
2 baby bok choy (halved)
7 ounces noodles
6 cups beef broth (divided)
1 tablespoon soy sauce (15 ml)
1 tablespoon soy sauce (dark)
1 teaspoon sesame oil
2 cloves garlic (smashed)
Salt and pepper (to taste)

Creamy Spinach Ricotta Chicken Rollups πŸ—πŸ§€πŸ₯¬βœ¨
Ingredients:
4 thin chicken cutlets
1 cup ricotta cheese
1 cup spinach, chopped
1/2 cup mozzarella cheese
1/4 cup Parmesan cheese
1 tsp garlic powder
Salt & black pepper
2 tbsp olive oil
1 cup marinara or Alfredo sauce
Instructions:
Prepare the filling
Mix ricotta, spinach, mozzarella, Parmesan, garlic powder, salt, and pepper in a bowl.
Stuff & roll the chicken
Lay chicken cutlets flat and spread filling evenly. Roll tightly and secure with toothpicks if needed.
Sear the rollups
Heat olive oil in a skillet and brown chicken rollups on all sides.
Bake
Place rollups in a baking dish, pour sauce over top, and bake at 375Β°F (190Β°C) for 25–30 minutes until cooked through.
Serve
Spoon extra sauce over the top and serve with pasta or vegetables.

Instructions:
Season the chicken
Season chicken breasts with salt, pepper, and Italian seasoning.
Cook the chicken

2 tbsp butter
3 cloves garlic, minced
2 cups fresh spinach
1 tbsp honey
1/2 cup heavy cream
1/4 cup Parmesan cheese
Salt & black pepper to taste
1/2 tsp red pepper flakes (optional)
Instructions:
Cook the shrimp
Melt butter in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and lightly golden. Remove and set aside.
