Asida (Sudanese Porridge)

Ingredients:
• 2 cups wheat flour or sorghum flour
• 4 cups water
• 1/2 tsp salt
• 1 tbsp butter (optional)

Instructions:
1. Boil Water:
• Heat water in a pot until it starts boiling.
2. Cook the Dough:
• Slowly add flour while stirring continuously to prevent lumps.
• Keep stirring until it thickens and becomes smooth.
3. Shape and Serve:
• Once thick, transfer to a plate and shape into a round mound.
• Serve with Ful Medames or a tomato sauce.

Grilled Tilapia (Poisson Grillé)

Ingredients:
• 1 whole tilapia, cleaned and descaled
• 2 tbsp vegetable oil
• 1 tbsp lemon juice
• 2 cloves garlic, minced
• 1 tsp ginger, grated
• 1 tsp paprika
• 1/2 tsp cayenne pepper
• 1/2 tsp salt
• 1/2 tsp black pepper

Instructions:
1. Prepare the Fish:
• Score the fish with shallow cuts and rub with lemon juice.
• Mix oil, garlic, ginger, paprika, cayenne, salt, and pepper.
• Coat the fish with the marinade and let sit for 30 minutes.
2. Grill the Fish:
• Preheat a grill or oven to 375°F (190°C).
• Grill for 15–20 minutes, flipping halfway, until golden brown.
3. Serve:
• Serve alongside fufu and pondu.
