🌶️🍍 Spicy Sweet Pineapple Chili Sauce 🍍🌶️

🛒 Ingredients:
1 whole fresh Pineapple (peeled, cored, and diced into small cubes)
4-5 Garlic cloves (smashed)
4-5 fresh Red Chili Peppers (like Fresno, Thai bird's eye, or red jalapeños depending on your heat tolerance!)
1 cup Apple Cider Vinegar (or rice vinegar)
Juice of 1 fresh lime
1/2 cup Honey or Sugar (adjust to taste)
1 tbsp Chili Flakes (for extra kick)
Garnish: Sesame seeds (black and white) & finely chopped fresh cilantro or chives

Prep the Base: In a hot pan, lightly sear your whole garlic cloves and fresh red chilies in a splash of oil until fragrant and slightly blistered.
Bring the Flavor: Toss in about 2/3 of your diced pineapple cubes, apple cider vinegar, honey/sugar, and chili flakes. Bring it to a simmer until the pineapple softens.
Blend it Smooth: Pour the mixture into a blender and blitz until completely smooth, vibrant, and glossy.
Thicken & Combine: For the smooth sauce back into the pan, bring it to a bubble, and let it reduce slightly. Stir in the remaining fresh pineapple cubes to give it that amazing chunky texture! Squeeze in your fresh lime juice.
The Finishing Touch: Pour your hot sauce into a clean glass jar. Top it off with a sprinkle of sesame seeds, chili flakes, and fresh herbs.
