Trust the Process 🌮
Taco Al Pastor—the kind of dedication that demands respect. It all starts with the marinade: guajillo chiles, achiote, pineapple, and spices that do best when grilled over a low heat. Days of prep work, careful layering of pork and fresh pineapple chunks stacked on that vertical spit, patience building with every step.
