This Spinach & Ricotta Chicken Bake is creamy, cheesy, packed with protein, and comes together in one dish… basically everything a busy weeknight needs.

Ingredients
• 2 lbs boneless, skinless chicken breasts, thinly sliced
• 1½ tsp salt, divided
• ½ tsp black pepper
• 16 oz ricotta cheese
• 8–12 oz frozen spinach, thawed and squeezed dry
• 2 cloves garlic, minced
• 1 egg (optional)
• 2 cups marinara sauce
• 1 cup mozzarella cheese
• ¼ cup parmesan cheese
Instructions
1. Preheat oven to 375°F.
2. Pour half of the marinara sauce into a large baking dish.
3. Place chicken on top and season with ½ tsp salt and pepper.
4. In a bowl, combine ricotta, spinach, garlic, remaining 1 tsp salt, and egg if using.
5. Spread the ricotta mixture evenly over the chicken.
6. Pour the remaining marinara sauce over the top.
7. Sprinkle with mozzarella and parmesan cheese.
8. Bake uncovered for 30–40 minutes, or until the chicken reaches an internal temperature of 165°F.
