Unlike dry grinding setups, which heat the blade and can ruin the temper of the steel, I use a 1000-grit, power-driven waterstone to grind a new edge, which is then polished on a leather strop with 1-micron polishing paste. When I'm done, your knife should have a better edge than when it was factory new. I can sharpen just about anything except serrated knives – kitchen and pocket knives, machetes, swords, axes, scissors, woodworking chisels and plane blades – even reel lawn mowers!
