I love a good Vietnamese spring roll, this tostada was inspired by them.

Spicy shrimp over fresh cabbage, thinly sliced carrot, onion and fresh mint leaves all nestled on a warm crispy corn tortilla, finished off with a generous drizzle of homemade peanut sauce and a sprinkle of crushed roasted peanuts.

Peanut Sauce:
1/2 c Peanut butter
2 tbs soy
1 tbs rice vinegar
2 tbs brown sugar
2 tbs Sriracha
1 tbs lime juice
3 cloves finely minced garlic
1 tbs grated ginger
2-4 tbs warm water
