For four days I asked every local shopkeeper in town what is “Colorado cuisine”. Not one person could answer. To me it’d be trout or cold water fish and wild game. On my last day found this at Colorado Bagel in Steamboat Springs. Definitely worth the wait! 🥯 🎣
