Thai Mango Salad🥭🥒🫑






Ingredients:
Ripe mango-1
Cucumber-2
Bell pepper- 1/2
Onion- 1/4
Mint leaves/ cilantro- 2 Tbs
Roasted peanuts- 3 Tbs

For the dressing:
Lime juice- 2 Tbs
Soy sauce- 2 Tbs
Brown sugar- 1 Tbs
Grated garlic- 1 clove
Crushed Thai chili- 1

Preparation:
Cut the Mango and vegetables into thin slices and set it aside
Combine all the ingredients of the sauce
Pour the sauce into the cut vegetables and mix well
Top with chopped mint/ cilantro and roasted peanuts

ഒരുവെള്ളിയാഴ്ചഊണ്/ Friday Lunch❤️



In my plate:
🌿Matta rice- കുത്തരിച്ചോറ്

🌿Chayote dry shrimp stir fry -ചൗ ചൗ ഉണക്കച്ചെമ്മീൻതോരൻ

🌿Dry shrimp fry- ഉണക്കച്ചെമ്മീൻ വറത്തത്

🌿Gooseberry pickle





Chayote Dry shrimp Thoran:
Ingredients:
Chayote-3
Dry shrimp- 1 cup
Kudambuli-4 pieces
Sliced onions- 1 cup
Sliced garlic- 2 Tbs
Sliced ginger- 1 Tbs
Green Chili-4
Curry leaves- Few
Salt- As needed
Grated coconut-2 cups

Preparation:
Wash the dry shrimp.
Add 1cup of water, kudambuli and 1Tsp salt and cook for 10 minutes
Add thinly sliced Chayote, onion, ginger, garlic. green chilli and curry leaves.
Add turmeric powder and salt as needed
Cover and cook until the chayote is soft
Add grated coconut
Combine everything well and cook for 5 more minutes
Turn off the flame.

For Tampering:
Add 2 Tbs coconut oil to a heated pan
Add 1 Tsp mustard seeds and let it sputter
Add dry chili and curry leaves
Add the cooked Chayote
Combine everything well
Sauté until it becomes dry
Enjoy 😋

ബീഫ് ഉലർത്തിയത്/ Beef Dry fry😋






Beef fry:
Ingredients:
Beef- 4 Lbs
Sliced onions- 1 cup
Sliced ginger- 2 Tbs
Sliced garlic- 3Tbs
Sliced coconut- 1/4 cup
Coconut oil-2 Tbs
Curry leaves- Few
Coriander powder- 3 Tbs
Chili Powder- 1 Tbs
Turmeric powder- 1 Tsp
Garam masala- 1 Tbs
Black pepper powder- 1 Tbs
Salt- As needed

For Tampering:
Coconut oil-2 Tbs
Mustard seeds- 1 Ts
Sliced onions/ shallots-3 Tbs
Crushed garlic-4 cloves
Black pepper powder- 2 Tbs
Curry leaves- Few

Preparation:
Add coconut oil to the hot pan
Add sliced onions, garlic and ginger and sauté until it turns light brown in color
Add curry leaves and sauté
Add coriander powder, chili powder, garam masala and black pepper powder and sauté in low flame until it becomes dark Bryon color
Add washed and drained beef
Add sliced coconut
Add salt as needed
Combine everything well and cook in medium flame until the beef becomes soft.
Turn off the flame and set it aside.

To make beef fry:
Add co coconut oil into a pan
Add mustard seeds and let it sputter
Add sliced onion/ shallots
Add crushed garlic and sauté until it becomes golden brown in color
Add curry leaves and black pepper powder and sauté for a minute
Add cooked beef and combine well
Sauté in low flame until the beef becomes dark brown in color
Beef fry is ready

ശർക്കര പാച്ചോർ/ Sharkara Pachor❤️


Ingredients:
Payasam rice- 2 cups
Jaggery- 3 cups
Grated coconut- 4cups
Salt- 1 Tsp
Cardamom -6
Cumin seeds-1.5 Tbs
Ghee- 4Tbs
Cashew nuts-3 Tbs
Raisins- 2Tbs

Preparation:
Wash rice thoroughly, add water and cook it well
Melt jaggery, strain and set it aside
Add salt, grated coconut and jaggery syrup into the cooked rice
Combine everything well
Transfer sugar, cardamom and cumin seeds into a mixer jar and powder it nicely.
Add it into the rice mix
Add 2 tablespoons of ghee and combine well
Cook everything for 10 minutes and should stir occasionally
Add 2 Tbs ghee into a pan
Add cashew nuts and raisins and let it fry
Transfer this into the rice mix and combine everything well
Tasty Pachor is ready
