TUNA NOODLE CASSEROLE — CREAMY, CHEESY & TOPPED WITH A GOLDEN CRUNCH!

🥕 Ingredients

12 oz egg noodles
2 cans (5 oz each) tuna, drained
1 can (10.5 oz) cream of mushroom soup
½ cup milk
1 cup frozen peas
½ small onion, finely diced
1 cup shredded cheddar cheese
½ cup sour cream
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt, or to taste

Crunchy Topping
1 cup panko breadcrumbs
2 tablespoons melted butter
¼ cup grated Parmesan cheese

🍳 Instructions

1) Preheat oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish.

2) Bring a large pot of salted water to a boil. Cook egg noodles according to package directions until just tender. Drain.

3) In a large bowl, mix cream of mushroom soup, milk, sour cream, garlic powder, black pepper, and salt until smooth.

4) Gently fold in the tuna, frozen peas, diced onion, cooked noodles, and cheddar cheese until everything is evenly coated.

5) Transfer the mixture to the prepared baking dish and spread it evenly.

6) Combine panko breadcrumbs, melted butter, and Parmesan in a small bowl. Sprinkle evenly over the casserole.

7) Bake uncovered for 25–30 minutes, until hot and bubbling around the edges and the topping is golden brown. Let rest for 5 minutes before serving.

💡 Fork & Hearth's Tip

For extra crunch, use panko breadcrumbs instead of regular breadcrumbs. Drain the tuna well and fold it in gently to keep some larger pieces throughout the casserole.

CREAMY HAM AND POTATO SOUP — THICK, HEARTY & PERFECT FOR A COZY NIGHT!

🥕 Ingredients

2 tablespoons butter
1 small onion, diced
2 celery stalks, diced
2 cloves garlic, minced
3 tablespoons all-purpose flour
4 cups chicken broth
2 lbs potatoes, peeled and diced
2 cups cooked ham, diced
1 cup whole milk
1 cup heavy cream
1 teaspoon dried thyme
½ teaspoon black pepper
Salt, to taste
1 cup shredded cheddar cheese, optional
Fresh parsley, optional

🍳 Instructions

1) Melt butter in a large pot or Dutch oven over medium heat. Add onion and celery. Cook for 5–6 minutes until softened.

2) Stir in garlic and cook for 30 seconds. Sprinkle in flour and stir for 1–2 minutes to form a light roux.

3) Gradually pour in chicken broth, stirring constantly until smooth. Add diced potatoes, thyme, and black pepper.

4) Bring to a gentle boil, then reduce heat and simmer uncovered for 12–18 minutes, until the potatoes are fork-tender.

5) Stir in diced ham, milk, and heavy cream. Simmer gently for another 5–7 minutes until heated through and creamy. Avoid boiling after adding the dairy.

6) For a thicker soup, mash a few potato pieces against the side of the pot and stir them back in. Taste and add salt as needed.

7) Ladle into bowls. Top with shredded cheddar and fresh parsley if desired, and serve with crusty bread.

💡 Fork & Hearth's Tip

Use leftover baked ham for extra flavor, and cut the potatoes into similar-sized cubes so they cook evenly. For a thicker texture without adding more flour, mash some of the cooked potatoes directly into the broth.

BISCUITS AND SAUSAGE GRAVY — CLASSIC SOUTHERN COMFORT FOR BREAKFAST!

🥕 Ingredients

8 refrigerated biscuits
1 lb ground breakfast sausage
¼ cup all-purpose flour
3 cups whole milk
½ teaspoon garlic powder
1 teaspoon black pepper, plus more to taste
¼ teaspoon salt, or to taste
½ teaspoon onion powder, optional
1 tablespoon butter, if needed

🍳 Instructions

1) Bake the biscuits according to package directions until golden brown.

2) While the biscuits bake, place a large skillet over medium heat. Add the breakfast sausage and cook for 6–8 minutes, breaking it into small crumbles until browned and cooked through.

3) Sprinkle the flour over the sausage. Stir continuously for 1–2 minutes to coat the meat and cook out the raw flour taste.

4) Gradually pour in the milk, stirring constantly to prevent lumps.

5) Add garlic powder, black pepper, onion powder if using, and a little salt. Bring to a gentle simmer.

6) Cook for 5–8 minutes, stirring frequently, until the gravy thickens. Add a splash of milk if it becomes too thick, then adjust the seasoning.

7) Split the warm biscuits in half and spoon the sausage gravy generously over them. Finish with extra black pepper and serve immediately.

💡 Fork & Hearth's Tip

Use regular breakfast sausage for the classic flavor, and add the milk gradually for smooth gravy. Remember that sausage can be salty, so taste the gravy before adding extra salt.

CHICKEN ENCHILADA CASSEROLE — CHEESY, SAUCY & EASY FAMILY COMFORT FOOD!

🥕 Ingredients

3 cups cooked shredded chicken
10 small corn tortillas
2 cans (10 oz each) red enchilada sauce
2 cups shredded Mexican-blend cheese
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels
1 small onion, diced
1 can (4 oz) diced green chiles
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon black pepper
2 tablespoons chopped fresh cilantro
Sour cream, for serving (optional)

🍳 Instructions

1) Preheat oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish.

2) In a large bowl, combine shredded chicken, black beans, corn, onion, green chiles, chili powder, cumin, garlic powder, and black pepper.

3) Spread a thin layer of enchilada sauce across the bottom of the baking dish. Arrange a layer of tortillas over the sauce, cutting them as needed to cover the dish.

4) Spread half the chicken mixture over the tortillas. Pour on some enchilada sauce and sprinkle with one-third of the cheese.

5) Repeat with another layer of tortillas, the remaining chicken mixture, more sauce, and another third of the cheese. Finish with the remaining tortillas, sauce, and cheese.

6) Cover loosely with foil and bake for 20 minutes. Remove the foil and bake another 10–15 minutes, until the cheese is melted and bubbling around the edges.

7) Let rest for 10 minutes before slicing. Garnish with cilantro and serve with sour cream if desired.

💡 Fork & Hearth's Tip

Warm the corn tortillas briefly before layering to make them more flexible and less likely to crack. Letting the casserole rest before cutting helps the layers hold together.

HONEY GARLIC CHICKEN THIGHS — STICKY, SAVORY & IRRESISTIBLY DELICIOUS!

🥕 Ingredients

8 bone-in, skin-on chicken thighs
2 tablespoons olive oil
Salt and black pepper, to taste
1 teaspoon paprika
1 tablespoon butter
5 cloves garlic, minced
⅓ cup honey
¼ cup soy sauce
1 tablespoon apple c***r vinegar
½ teaspoon red pepper flakes, optional
1 tablespoon chopped fresh parsley, optional

🍳 Instructions

1) Pat chicken thighs dry with paper towels. Season both sides with salt, pepper, and paprika.

2) In a small bowl, whisk together honey, soy sauce, apple c***r vinegar, minced garlic, and red pepper flakes, if using.

3) Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and sear for 5–7 minutes until the skin is golden. Flip and cook for another 3 minutes.

4) Reduce heat to medium-low. Add butter and pour the honey-garlic sauce around the chicken. Let it bubble gently for 1–2 minutes, spooning some sauce over the thighs.

5) Transfer the skillet to a preheated 400°F (200°C) oven. Bake uncovered for 20–25 minutes, or until the thickest part of each thigh reaches 165°F (74°C).

6) Carefully remove the skillet from the oven. Spoon the thickened sauce over the chicken and let rest for 5 minutes.

7) Sprinkle with fresh parsley and serve with rice, roasted vegetables, or mashed potatoes.

💡 Fork & Hearth's Tip

Honey can burn quickly, so add the sauce after searing the chicken and keep an eye on it while baking. For extra-crispy skin, spoon the sauce around the chicken rather than covering the skin completely.

SWEDISH MEATBALLS WITH CREAMY GRAVY — TENDER MEATBALLS IN RICH, COMFORTING SAUCE!

🥕 Ingredients

Meatballs

1 lb ground beef
½ lb ground pork
½ cup breadcrumbs
¼ cup milk
1 small onion, finely grated or minced
1 egg
½ teaspoon garlic powder
½ teaspoon ground allspice
¼ teaspoon ground nutmeg
¾ teaspoon salt
½ teaspoon black pepper
2 tablespoons butter or olive oil, for browning

Creamy Gravy

3 tablespoons butter
3 tablespoons all-purpose flour
2 cups beef broth
½ cup heavy cream
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard, optional
Salt and black pepper, to taste
Fresh parsley, optional

🍳 Instructions

1) In a small bowl, combine breadcrumbs and milk. Let stand for 2 minutes.

2) In a large bowl, mix ground beef, ground pork, soaked breadcrumbs, onion, egg, garlic powder, allspice, nutmeg, salt, and pepper. Mix gently until combined.

3) Shape into small meatballs, about 1–1½ inches wide.

4) Heat butter or oil in a large skillet over medium heat. Add meatballs in batches and brown on all sides for about 6–8 minutes total. Transfer to a plate; they will finish cooking in the gravy.

5) Reduce heat to medium. Melt 3 tablespoons butter in the same skillet. Whisk in flour and cook for 1–2 minutes.

6) Gradually whisk in beef broth until smooth. Add heavy cream, Worcestershire sauce, and Dijon mustard if using. Simmer for 3–5 minutes until the gravy begins to thicken.

7) Return meatballs and their juices to the skillet. Simmer gently for 8–10 minutes, until cooked through to 160°F (71°C) for the beef-and-pork mixture.

8) Taste and adjust seasoning. Sprinkle with parsley and serve over mashed potatoes, egg noodles, or rice.

💡 Fork & Hearth's Tip

The combination of allspice and nutmeg gives Swedish meatballs their signature warm flavor. Keep the gravy at a gentle simmer after adding the cream to help it stay smooth.

HOMEMADE SMASH BURGERS — CRISPY EDGES, JUICY BEEF & MELTED CHEESE!

🥕 Ingredients

1½ lbs ground beef (80/20)
4 hamburger buns
4 slices American or cheddar cheese
1 small onion, thinly sliced
1 tomato, sliced
4 lettuce leaves
¼ cup dill pickle slices
2 tablespoons butter, for toasting buns
Salt and black pepper, to taste
1 tablespoon neutral cooking oil, if needed

Burger SauceChicken Bacon Ranch Pasta
¼ cup mayonnaise
1 tablespoon ketchup
1 teaspoon yellow mustard
1 tablespoon finely chopped pickles
½ teaspoon pickle juice

🍳 Instructions

1. Divide ground beef into 8 loose balls, about 3 oz each. Keep the meat loosely packed for tender burgers.

2. Mix mayonnaise, ketchup, mustard, chopped pickles, and pickle juice in a small bowl. Refrigerate while preparing the burgers.

3. Heat a large cast-iron skillet or flat griddle over medium-high to high heat until very hot. Lightly butter the cut sides of the buns and toast until golden. Set aside.

4. Place a beef ball on the hot cooking surface. Immediately press it firmly into a thin patty using a sturdy metal spatula or burger press. Season with salt and pepper. Repeat with the remaining beef, working in batches.

5. Cook for about 2 minutes, until the edges are deeply browned and crisp. Scrape underneath firmly to preserve the crust, then flip.

6. Add a slice of cheese to each patty and cook for another 1–2 minutes, until the beef is cooked through and the cheese melts. Ground beef should reach 160°F (71°C).

7. Spread burger sauce on the toasted buns. Stack two patties on each bun and add lettuce, tomato, onion, and pickles. Serve immediately.

💡 Fork & Hearth's Tip

For the best crispy edges, use a very hot, flat cooking surface and press the beef only once, right after placing it on the griddle. Don't press the patties again while they cook, or you'll squeeze out their juices.

CREAMY CHICKEN AND RICE CASSEROLE — EASY, CHEESY & COMFORTING!

🥕 Ingredients

2 cups cooked shredded chicken
1 cup uncooked long-grain white rice
2 cups chicken broth
1 can (10.5 oz) cream of chicken soup
½ cup sour cream
1 cup shredded cheddar cheese
1 cup frozen peas and carrots
½ small onion, finely diced
2 tablespoons melted butter
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
Salt, to taste
2 tablespoons chopped fresh parsley, optional

🍳 Instructions

1) Preheat oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish.

2) In a large bowl, whisk together chicken broth, cream of chicken soup, sour cream, melted butter, garlic powder, onion powder, pepper, and a little salt.

3) Stir in uncooked rice, shredded chicken, frozen vegetables, diced onion, and half the cheddar cheese until evenly combined.

4) Pour the mixture into the prepared baking dish and spread it evenly. Cover tightly with foil.

5) Bake for 50–60 minutes, until the rice is tender and most of the liquid is absorbed. Check near the end; if the rice is still firm, add a splash of hot broth and continue baking covered.

6) Remove the foil, sprinkle the remaining cheddar over the top, and bake uncovered for another 5–10 minutes until the cheese melts and turns lightly golden.

7) Let stand for 5–10 minutes before serving. Garnish with parsley if desired.

💡 Fork & Hearth's Tip

Keep the dish tightly covered during the main baking time so the rice cooks evenly. Use regular long-grain white rice rather than instant rice, and check that the chicken reaches 165°F (74°C) if using uncooked chicken instead of cooked shredded chicken.

CLASSIC SLOPPY JOES — SWEET, SAVORY & MESSY IN THE BEST WAY!

🥕 Ingredients

1 lb ground beef
1 small onion, finely diced
½ green bell pepper, diced (optional)
2 cloves garlic, minced
¾ cup ketchup
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
½ cup water or beef broth
½ teaspoon paprika
½ teaspoon black pepper
Salt, to taste
4–6 hamburger buns
1 tablespoon olive oil, if needed

🍳 Instructions

1) Heat a large skillet over medium heat. Add ground beef and cook for 5–7 minutes, breaking it into small crumbles until browned.

2) Drain excess grease if needed. Add onion and bell pepper, if using, and cook for 3–4 minutes until softened.

3) Stir in garlic and cook for 30 seconds.

4) Add ketchup, mustard, Worcestershire sauce, brown sugar, water or broth, paprika, black pepper, and a little salt. Stir until combined.

5) Reduce heat to low and simmer uncovered for 8–10 minutes, stirring occasionally, until the sauce thickens and coats the beef.

6) Taste and adjust the seasoning. Add a splash of water if the mixture becomes too thick.

💡 Fork & Hearth's Tip

Toast the buns lightly before filling them. It adds flavor and helps keep the bread from getting soggy under the saucy beef.
