This plate is packed with high-quality protein from the salmon, combined with wholesome veggies to fuel your workouts and recovery. It’s a simple, flavorful way to keep your nutrition on point without doing extra prep work.
Here's how it comes together:
- 2 salmon fillets
- 4 tbsp olive oil
- Juice of 1 lemon
- 4 garlic cloves, minced
- Salt and black pepper
- Fresh parsley
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tbsp honey
- 3 tbsp soy sauce
- 200 g broccoli
- 150 g carrots, sliced
- 200 g asparagus
- 2 zucchinis, spiralized or sliced thin
- 200 g mixed vegetables
1. Season salmon with 2 tbsp olive oil, lemon juice, garlic, salt, and pepper.
2. Cook salmon in a pan or bake at 200°C / 400°F for 12–15 minutes.
3. Toss cucumber, tomatoes, onion, olive oil, lemon juice, salt, and pepper for the salad.
4. Prepare honey garlic sauce and cook salmon until golden.
5. Steam broccoli and carrots until tender-crisp.
6. Sauté asparagus for 4–5 minutes.
7. Serve salmon with veggies and garnish with fresh parsley.
