Feast your eyes and spoons on the ultimate dessert: a Salted Caramel Chocolate Pecan Cake! 🧡🤎
Ingredients:
For the Cake:
2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
2 cups granulated sugar
3 large eggs
2 tsp vanilla extract
1 1/2 cups buttermilk
1 cup pecans, chopped
For the Salted Caramel:
1 cup granulated sugar
6 tablespoons unsalted butter, room temperature
1/2 cup heavy cream, warmed
1 teaspoon sea salt
For the Chocolate Ganache:
1/2 cup heavy cream
1 cup dark chocolate chips
For Garnish:
Whole pecans
Directions:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
For the Cake Batter:
2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Gradually mix in the dry ingredients alternately with buttermilk, starting and ending with the dry ingredients. Fold in chopped pecans.
Divide batter evenly between prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
For the Salted Caramel:
7. While the cake is cooling, make the caramel sauce. Heat sugar in a medium saucepan over medium heat, stirring constantly until melted and a deep amber color.
Carefully stir in butter, and once it's melted, slowly drizzle in the heavy cream while stirring. The mixture will bubble.
Boil for one minute, remove from heat, and stir in the sea salt. Allow to cool and thicken slightly before using.
For the Chocolate Ganache:
10. For the ganache, heat the heavy cream until simmering and pour over the chocolate chips. Let sit for 2 minutes, then stir until smooth.
Assembly:
11. To assemble, place one cake layer on your serving plate. Spread caramel sauce over the top, then place the second layer on top.
Pour the chocolate ganache over the cake, allowing it to drip down the sides. garnish with whole pecans.
