Cozy Italian Sausage Potato Soup
Ingredients
- 1 lb Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 cups kale or spinach, chopped
- Grated Parmesan cheese for serving
Directions
1. In a large pot over medium heat, cook the Italian sausage until browned, breaking it apart as it cooks.
2. Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 5-7 minutes.
3. Stir in the potatoes, chicken broth, Italian seasoning, and red pepper flakes (if using). Bring to a boil.
4. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
5. Stir in the heavy cream and chopped kale or spinach, cooking for an additional 5 minutes until the greens are wilted.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with grated Parmesan cheese.
