Homemade Chicken Quesadilla

Chicken (I usually use a poached chicken breast but this is canned-2 small cans)
1 small can chopped green chilis
Taco sauce
Salsa
Melty cheese (your preference)
Tortillas (I used burrito sized)

Mix chicken, chilis, taco seasoning
to taste, and salsa to taste

Add olive oil to skillet (enough to cover half the skillet)
Add one tortilla to skillet (medium heat). Add a good layer of cheese on top of the tortilla. Add chicken, covering the whole tortilla (or half if you are cooking for one). Add another layer of cheese and top with second tortilla. (Or fold over if cooking for one). Melt cheese and cook until slightly brown and flip. Serve with your favorite condiments.

Stuffed Mushrooms

12 (about) mushrooms. (Any size)
1/2 stick butter
Small onion
1 TBS minced garlic
Breadcrumbs
Mozzerella cheese (can use parm)

Clean mushrooms and remove the stems. Chop the stems. Chop a small onion (small dice). Add butter to skillet. Cook stems and onions until onions become translucent. Add garlic and breadcrumbs (enough to make a good stuffing consistency). Add mixture to mushroom caps leaving a dent in the middle to nestle cheese. Add cheese to top. Bake at 400 until stuffing is a little toast and cheese is melted.

Easy Homemade Apple Pie

2 refrigerated pie crusts (or a pack of two)
1 cup of sugar
2 Tablespoons flour
1 teaspoon cinnamon
Apples (enough to fill your pie plate)

Peel and thinly slice apples.
Mix dry ingredients then coat apples
Put first pie crust in bottom of pie plate (if you want to roll it out to make it thinner, do it). I like the way it turns out just laying it in there. Pour coated apples into pie crust. Dollop a few pats of butter on top of apples (about half a stick). Apply top crust, crimp the edges and make some cuts in the top for steam to escape. Cook at 400 degrees for 50 minutes.

Chicken orzo

Preheat oven to 400

One block of Boursin cheese
1 lb orzo (2 cups)
I jar of sun dried tomatoes with oil
2 tbsp jarlic
4 cups chicken broth or stock
Italian seasoning to taste
1-1/2 to 2 cups of favorite cheese (I used Gruyère and parm mixed
1/2 bag fresh spinach
2 cups chicken (your preference) cooked

Add Boursin to center of large oven proof skillet or 9x13 casserole. Pour tomatoes around it (with the oil). Add orzo on top of tomatoes. Add chicken stock. Add garlic to top of Boursin (it will spread). Cook at 400 for 30 minutes covered. Remove from oven and add chicken, spinach (it will wilt trust me) and rest of the cheese. Mix well. Return to oven for 10 to 15 minutes. Serve.

Spinach quiche and sautéed asparagus!

Quiche;:
1 frozen deep dish pie crust.
2 tbs butter
1 tbs olive oil
1/2 yellow or white onion diced
4 large mushrooms sliced (optional)
1 tbs jarlic (or two cloves) to taste
2 handfuls of fresh spinach (rough chopped)
5 eggs
Milk or cream (to preference)
1 cup Swiss cheese (or cheese of your choice)
Salt and pepper to taste.

Pre bake pie crust for ten mins.
Add butter and olive oil to skillet. Sautee onions, mushrooms for about 2-4 mins
Add garlic and spinach. Sautee until spinach is wilted. Add Sautee mixture to pre baked pie crust.
Beat eggs with cheese. Add salt and pepper to taste. Add to top of Sautee mixture. Bake in n 350 oven for about 30 mins (check at 30)

Asparagus:

This is by far the best asparagus I have ever eaten. It’s fool proof!

Cut or break rough ends from fresh asparagus.melt 3 tbs butter and 1 tbs olive oil on bottom of skillet. Once it is cooking add lemon pepper to taste. (Trust me here). Add asparagus and Sautee until it’s the texture you like.

I did half in BBQ and half in buffalo.

I used fresh wings. I dried them and seasoned with salt, pepper, onion powder, garlic powder and smoke paprika. I heated a Dutch oven with a whole bottle of vegetable oil to 350 degrees. Once the wings were room temp I fried them until 165 in the middle. (Drummond and flats cook different, so I cook them separately). Toss in sauce. Buffalo sauce is 1 c per n salted butter, 1/2 c fave hot sauce. (I used Louisiana) or favorite bbq sauce. My recipe came from Cooking with Kimmy Sue

Stewed squash with onions.

Two large yellow squash.
One large white or yellow onion.
1/2 stick of butter.
Salt and pepper to taste.
A dash of nutmeg. (Optional)

Slice squash into rounds (about 1/2 inch thick). Place in a pot. Add sliced onion on top of squash. Cut butter into pats and top the onion. Cover and turn on medium low heat and cook until onions are tender. (About 30 mins). The squash makes it own liquid. No water necessary. Add a dash of nutmeg.
