BLACK MAGIC CAKE
A cake as dark as midnight.
Ingredients
* 2 cups sugar
* 1¾ cups all-purpose flour
* ¾ cup unsweetened cocoa powder
* 2 teaspoons baking soda
* 2 teaspoons baking powder
* 1 teaspoon salt
* 2 eggs
* 1 cup buttermilk or sour milk
* 1 cup strong black coffee
* ½ cup vegetable oil
* 1 teaspoon vanilla extract
Directions
1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans or one 13 × 9 × 2-inch baking pan.
2. In a large bowl, combine sugar, flour, cocoa, baking soda, baking powder, and salt.
3. Add eggs, buttermilk, hot black coffee, vegetable oil, and vanilla.
4. Beat with an electric mixer on medium speed for about 2 minutes. Don’t worry—the batter will be quite thin.
5. Divide evenly between prepared pans.
6. Bake round cakes for 30–35 minutes, or a rectangular cake for 35–40 minutes, until a toothpick inserted into the center comes out clean.
7. Cool in the pans for about 10 minutes before turning onto wire racks. Allow to cool completely before frosting.
Mocha Frosting
* 3 tablespoons butter
* 3 tablespoons unsweetened cocoa powder
* 1 tablespoon warm water
* 1 tablespoon coffee-flavored liqueur (optional; strong coffee can be substituted)
* About 1½ cups powdered sugar
To Make the Frosting
Melt the butter in a small saucepan over low heat. Stir in cocoa, warm water, and coffee liqueur or strong coffee. Remove from heat.
Gradually beat in powdered sugar until smooth and spreadable. Add a little additional warm water if necessary.
Spread generously over the cooled cake.
A Little Kitchen Witchery
As you stir the batter, work your intention into it. Chocolate can be associated with love, pleasure, comfort, and abundance, while coffee brings an energetic, awakening quality.
You might whisper:
“Dark as night and rich as earth,
From my hands, intention birth.
Sweetness, strength and blessings stay,
Within this home and through this day.”
Serve, share, and enjoy.
