Soaking up the last bits of summer while we can.

With the weekend ahead, there’s still time to get outside, build a fire, and cook something good. Steak for dinner, cinnamon rolls in the morning, vegetables somewhere in between, cast iron can handle all of it.

That’s what we love about a good skillet. It doesn’t really matter where you’re cooking. Over the fire, on the grill, in the oven, or back on the stovetop, one pan can do it all.

Chocolate and peanut butter never disappoint.

This Chocolate Peanut Butter Lava Cake has a rich, fudgy center with a layer of melted peanut butter chocolate in the middle. It’s simple to make, especially in cast iron, and best served warm with a scoop of vanilla ice cream.

8 oz semi-sweet or dark chocolate (60–70%), chopped
1 cup unsalted butter (2 sticks)
1 cup powdered sugar
4 large eggs
4 egg yolks
½ cup all-purpose flour
2 teaspoons vanilla extract
Pinch of salt

Peanut Butter Ganache Filling Ingredients:
½ cup dark chocolate chips or chopped chocolate
¼ cup peanut butter (all natural for best texture)
Pinch of salt

Peanut Butter Swirl Ingredients:
¼ cup peanut butter
2 teaspoons maple syrup or powdered sugar

It’s simple, forgiving, and one of the best ways to start building confidence with your skillet. Baking cornbread also helps build seasoning naturally, fats from the batter coat the cooking surface, and the heat helps those fats bond to the iron, gradually creating a smoother, more naturally nonstick finish.

There’s a reason our skillets are called No. 4, No. 6, No. 8, No. 10, and No. 12.

Lancaster’s sizing is rooted in a tradition that dates back to the 1800s, when cast iron cookware and wood-burning stoves went hand in hand. The numbers correspond to the size of the openings, or “eyes,” on antique wood stoves, an old system we’ve chosen to carry forward.

We kept that classic sizing, but built the skillets for the way we cook today: lighter, smoother, and made to last for generations.
