SHORT CUT KIMCHI⤵️

INGREDIENTS
5 lbs napa cabbage
1 cup kosher salt
1 cup room temp

KIMCHI PASTE
3/4 cup gochugaru (korean pepper flakes)
3/4 up hot water
3/4 cup apple juice
6 TBSP fish sauce
3 TBSP sugar
8 cloves minced garlic
12 scallion, cut 1 inch wide
1 cup carrots, julliened

1. Cut Napa cabbage into quarters. Cut the core off Napa cabbage an then cut 1 inch wide.

2. Sprinkle 1/2 cup of sea salt and 1/2 cup water over your Napa cabbage and mix.
- Then combine another 1/2 cup kosher salt and 1/2 cup water, combine well and allow this to sit for 30 mins making sure to mix half way through.

3. After 30 minutes, your Napa cabbage with decrease in size. Rinse and wash throughly under cold water 2-3x. On the last round, make sure you squeeze out any extra liquid

4. During the 30 minutes of letting your cabbage sit, mix all of your ingredients listed under KIMCHI PASTE.

5. Now combine your Napa cabbage with your kimchi paste. Mix well. Store in an air tight container at room temp for a couple of hours and then move into the fridge.

Note: I love eating my kimchi as soon as I finish make it but it’s all preference on how fermented/ sour you like it. Kimchi is good for 3-6 months.

LEMONGRASS CHICKEN
Recipe is from:

MARINADE:
3 lbs chicken thighs
4 TBSP minced garlic
3 TBSP minced lemongrass
5 TBSP oyster sauce
2-3 TBSP brown sugar
2 TBSP soy sauce or seasoning sauce
1/2 tsp black pepper

SCALLION OIL
1 cup chopped scallion
Salt to taste
1 TBSP oil— I used avocado oil

INSTRUCTIONS:
1. Combine all ur ingredients listed under MARINADE and marinate over night (note: for my chicken, I trimmed off any excess fat/ skin)

2. After marinating, cook on medium heat for 12-15 minutes on each side. If you are doing boneless, its 7-8 minutes on each side (note: cook time will vary depending on strength of ur stove and how many chicken thighs you have on ur skillet)

3. FOR THE SCALLION OIL: combine all the ingredient listed under SCALLION OIL and microwave for 1-2 minutes.

4. Once ur chicken and scallion oil is done, plate everything together. I like to serve with: cucumbers, tomatoes, fried egg and rice
