The Touroku Sakai CroMoV Sanshi 180mm Bunka is a good example of how a small geometry change can make a knife much more versatile.

You still get the relatively flat Bunka profile that works well with push-forward and pull-back cutting, but a slight curve toward the front gives you enough clearance for some rocking as well.

The blade comes in at 47mm tall with a clipped K-tip for detailed work, while a 2mm spine, full flat grind, and 15° edge angle keep the cutting feel light and controlled.

A gyuto and a Western chef knife are both versatile, all-purpose kitchen knives — but one difference in blade design can noticeably change how they feel on the cutting board.

Nakiri or Santoku? The right answer depends less on which knife is “better” and more on what you already own.

A Nakiri is a Japanese vegetable knife with a flatter blade profile, giving it more board contact and a very distinct cutting feel. It works especially well with push-forward cutting, pull cuts, and efficient mincing. It is not usually the knife you reach for if you want a smooth rock chop, but it brings something unique to vegetable prep.

A Santoku is the more versatile of the two. The name is often translated as “three virtues,” referencing its ability to handle vegetables, fish, and meat.
