Another Sourdough discard recipe!

Pupper approved!!

2 large eggs
2/3 cups of sourdough discard.
2/3 cup of pumpkin purée (you can also use sweet potato purée)
1/4 natural creamy peanut butter
1 cup quick cook oats
2 cups of whole wheat flour

These buns are so good! They are perfect for hamburgers, lunch meat, tuna/chicken salad. They are quick and easy to make and WAY better than store bought!

The recipe is:
1 cup of warm water (110 degrees)
2 tablespoons of yeast.
1/3 cup of sugar
Let this sit for 5 minutes in the bowl of your mixer.
Add 1 beaten egg.
1/4 cup of olive oil
3 cups of bread flour (you can use all purpose but I do think these turn out better with bread flour)
1 teaspoon of salt.

Knead by hand or with your dough hook on the stand mixer about 5-8 minutes.

Divide the dough into 8 pieces. Roll them into balls place on your baking sheet and cover. Let them rise for 20 minutes then bake at 425 for 8-10 minutes! Brush with butter when done (optional)

Two of my favorite things! Funfetti and gooey butter cake! If you’re not from St.Louis or near it you may have never had the joy of experiencing a gooey butter cake.. so make this and thank me later 🤪

Ingredients
1 box of funfetti cake mix
4 eggs
1 stick of butter (unsalted)
1 1/2 tsp vanilla extract
8 ounce block of cream cheese (room temp)
2 1/2 cups confectioners sugar
Rainbow sprinkles for the top.

Preheat your oven to 350 degrees. Grease a baking dish and line with parchment paper. Don’t skip this step.

Mix the funfetti cake mix with a stick of melted butter, 2 eggs, and 1 tsp of vanilla extract in a stand mixer. Press this into the bottom of your lined dish.
Then combine the cream cheese and powdered sugar until smooth. Add the eggs and a 1/2 tsp of vanilla extract. Combine until smooth.
Pour this over your crust and top with the rainbow sprinkles. Bake for 35 minutes. Let it cool for about two hours before cutting. 💙

Are you tired of throwing away sourdough discard? Me too… so let’s make something with it.

These are brown butter chocolate chip cookies.

Ingredients
1/2 cup of butter (1 stick)
1 cup of dark brown sugar.
1/4 cup of raw cane sugar.
1 tsp of vanilla extract
1/2 tsp of sea salt.
1/2 tsp of baking powder
1/2 tsp of baking soda
1 cup of unbleached all purpose flour PlUS 2 tablespoons
1/2 cup of sourdough discard.
1 egg yolk
1/2-3/4 cup of chocolate chips. (Measure with your heart)

Preheat your oven to 400

BROWN YOUR BUTTER. Do not skip this step. If you do….These will not be fluffy and soft.

To brown your butter melt your butter over medium heat and stir frequently. Swirl the butter in your pan. After about 5-7 minutes you will see it start to foam and it will cover the top. After that stir it. Small brown specs will form on the bottom of the pan and the butter will be extremely fragrant. This means your butter is browned. Put it in a mixing bowl and allow it to cool for 6 minutes.

Add in your brown sugar and raw cane sugar and stir it until it is light and fluffy.

Add in your vanilla, baking powder, baking soda, salt, and flour. Stir this with a light hand with a silicone spatula or a wooden spoon. Folding the dough over each other. This ensures the flour is evenly distributed.

Lastly add your chocolate chips!

Place the dough in the freezer for 15 minutes. Line your cookie sheet with parchment paper.
Bake at 400 for 8-10 minutes. Sprinkle the top with sea salt Let them cool for AT LEAST five minutes before eating or moving to a dish. Enjoy.
