WATERGATE SALAD! If you’re looking for a last minute side dish, or dessert for your Easter dinner, I’ve got you covered.

Ingredients

1 3.4 ounce package pistachio pudding
1 20 ounce can crushed pineapple with juice
1 cup miniature marshmallows
1 cup pecans, chopped and toasted
1 8 ounce container Cool Whip

Directions

In large bowl, stir together pineapple and pudding mix until well blended. Add marshmallows and pecans and stir. Fold in Cool Whip. Refrigerate at least one hour before serving.

Here’s an easy and delicious CARROT CAKE! Perfect for Easter dinner💐🩷💐

Ingredients

2 cups all-purpose White Lily Baking Community, sifted
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
2 cups granulated sugar
4 eggs
1 1/2 cups vegetable oil
2 4-ounce containers baby food carrots
1/2-1 cup grated carrots + 1 teaspoon flour, optional

Directions

Preheat oven to 325F and grease and flour 3 8"-9" cake pans.

2. Sift flour, baking soda, salt and cinnamon together in a large bowl. Add sugar and stir. Add eggs and oil and whisk together until well blended. Fold in carrots. Pour two cups of batter into each cake pan.

3. Bake 20-25 minutes or until a toothpick inserted in the middle comes out clean. Cool completely before frosting.

Cream Cheese Frosting

Shute Pecan Company

2 sticks salted butter, softened
2 8-ounce package cream cheese, softened
8 cups powdered sugar
1 teaspoon clear vanilla
1 cup Shute Pecan Company pecans, chopped

Mix butter and cream cheese until fluffy and blended. Add vanilla and mix until blended. Add sugar in 3 intervals and mix until blended and fluffy.

If you like deviled eggs, you’re going to LOVE these
Chick-fil-A Style Eggs! It’s a new spin on an old classic! Delicious!

Ingredients

6 boiled eggs
1/4 cup mayonnaise
1/4 cup Chick-Fil-A Sauce
1 teaspoon dill pickle relish
3 tablespoons bacon bits

Directions

Place egg yolks in medium sized bowl. Add mayonnaise, CFA sauce and mix on high speed until smooth and creamy. Add relish and bacon and stir until blended. Fill egg whites and garnish as desired.

This is not your average BUNNY CAKE! It’s so easy to transform the ordinary to extraordinary! Full recipe is below⬇️

Bunny Cake

Ingredients For Cake

1 box white cake mix
1 cup all purpose flour
1 cup sugar
2 tablespoons vegetable oil
1 cup sour cream
3/4 cup egg whites
1 cup water
1 teaspoon coconut extract

Prepare cake mix according to package directions for 2 9” round cake pans. Let cake cool completely. Slice each cake horizontally creating a total of four cake layers.

Frosting

2 cups sugar
16-ounces sour cream
14-ounces sweetened coconut
12-ounce container Cool Whip, thawed

Directions

1. The night before assembling the cake, combine sugar, sour cream and coconut. Reserve ¼ cup of coconut for garnish. Cover and refrigerate overnight.

2. Blend the Cool Whip and sour cream mixture together and frost cake. Garnish with coconut and store cake in refrigerator.

For Bunny Ears

Supplies

• 1 wire clothes hanger
• Fresh thyme stems
• Floral wire
• Fresh or artificial flowers, optional

Directions

1. Untwist hanger at the top hook. Using wire cutters, cut the bottom part of the hanger in half. Cut the top portion off of each half forming a large V shape, resembling bunny ears. Twist the bottom ends of each ear together, leaving a straight 1-2 inch stem to insert into the cake.
2. Select slightly curved pieces of thyme that match the shape of the wire ears. Using small pieces of floral wire, fasten the thyme stems to the wire frame.
3. Stick the finished ears into the top of the cake. Place fresh flowers around the base of the bunny ears if desired.

Welcome to our HAPPY PLACE!

I’m getting lunch ready and we’re just enjoying the day. It’s just beautiful! The sun is shining and the birds are singing! I’m also making some homemade Thousand Island dressing. Yum!

Let’s make a scratch made KEY LIME PIE!

Graham Cracker Crust

1 stick salted butter, melted
2 cups graham Cracker crumbs
1/2 cup light brown sugar
1/2 cup pecans, chopped

Directions

1. Preheat oven to 350F.
2. Mix together all ingredients in a 8-9 inch pie plate. Press crust into pie plate. Bake for 8 minutes

Key Lime Filling

Ingredients

2 cans sweetened condensed milk
4-5 egg yolks
1/2-3/4 cup fresh lime or key lime juice
1 teaspoon lime zest

Directions

1. While crust is baking, prepare filling. Add milk, 4 egg yolks and 1/2 cup lime juice and whisk together until well blended. Taste to see if the lime flavor is strong enough. If not, add remaining lime juice and additional egg yolk.
2. Pour filling into hot pie crust. Return to the oven and cook an additional 10 minutes.
3. Allow pie to cool to room temperature. Refrigerate. Once pie is cooled, top with whipped cream if desired

CAST IRON SHORTBREAD COOKIES!

Let me show you what we’re doing with some of the strawberries we picked yesterday!

Cast Iron Shortbread

Ingredients

2 sticks salted butter, softened (reserve butter wrappers)
3/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup cornstarch
1 1/2 cups all purpose flour
3/4 cup pecans, chopped
Granulated sugar

Directions

1. Preheat oven to 350F. Using a stand mixer, cream butter, sugar and vanilla on low speed until fluffy.
2. Sift cornstarch and flour together and add to butter mixture. Add pecans and mix on low speed until a dough is formed.
3. Line 2, 10.5 cast iron skillets with parchment paper. Wipe parchment paper with butter wrappers. Divide dough in half and place in skillets. Using your hands press dough into parchment paper out to the edges of the skillet. Sprinkle granulated sugar on top.
4. Bake 20-22 minutes until browned. Remove from oven and let shortbread cool in the skillet. Once cooled, break into pieces.

For Marshmallow Cream dip mix together 16oz jar of marshmallow fluff, 8 ounces softened cream cheese, 1 teaspoon vanilla and 1 teaspoon of lemon juice together until well blended.
