Crockpot Beef Barley Soup
The one step not to skip: brown the beef first, because that's where the broth gets its color.
Ingredients
2 lb beef chuck roast, cut into 1-inch cubes
1 tsp salt
½ tsp black pepper
2 tbsp vegetable oil
1 yellow onion, diced
4 carrots, sliced into coins
3 celery stalks, sliced
3 garlic cloves, minced
2 tbsp tomato paste
8 cups beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
2 bay leaves
¾ cup pearl barley
Directions
1. Season the beef with salt and pepper. Brown it in the oil in a hot skillet in two batches, 3–4 minutes per side, so the browned bits flavor the broth.
2. Cook the onion in the same skillet for 3 minutes until soft, then stir in the garlic and tomato paste for 1 minute.
3. Scrape everything into the slow cooker. Add the beef, carrots, celery, broth, Worcestershire, thyme and bay leaves.
4. Cover and cook on low for 7 hours.
5. Stir in the barley and cook on high for 1 more hour, until the barley is tender but still chewy and the beef breaks apart with a spoon.
6. Take out the bay leaves and taste for salt and pepper before serving.
