🥩🔥 Tips for getting a tasty crust on your steaks:
AT LEAST 45 minutes and up to 2 days prior to cooking:
- Pat meat dry with paper towels.
- Sprinkle a healthy amount of kosher salt on all sides.
- Place on a rack and put in the refrigerator (if not cooking within an hour or so)
- Take out about an hour before cooking and pat dry again

The salt will draw the moisture out of the steak and then bring the seasoning back in over time.

Warning ‼️: if you can’t salt at least 45 minutes before, it’s much better to do it IMMEDIATELY BEFORE cooking. Between 5 and 45 minutes will result in a difficult to sear crust because it’s just long enough to pull the moisture to the surface without reabsorbing.
