Mango Shrimp Salad Delight

Ingredients:

250g shrimp, peeled and deveined
1 ripe mango, diced
1 cup fresh lettuce or mixed greens
2 tbsp red onion, thinly sliced
1 tbsp fresh herbs (mint or cilantro), chopped
1 tbsp olive oil
1 tbsp lemon or lime juice
1 tsp honey
Salt and black pepper to taste
Chili flakes (optional)
Edible flowers for garnish (optional)

Directions:

Cook the shrimp in a pan with a little olive oil over medium heat for 2–3 minutes per side until pink and fully cooked. Let cool slightly.
In a bowl, combine diced mango, lettuce, red onion, and fresh herbs.
Add the cooked shrimp to the salad mixture.
In a small bowl, whisk together olive oil, lemon/lime juice, honey, salt, pepper, and chili flakes.
Pour the dressing over the salad and gently toss to combine.
Transfer to a serving glass or bowl and garnish with edible flowers if desired.
Serve fresh and enjoy!

Lemon Garlic Butter Cod with Cherry Tomatoes

Ingredients:

2 cod fillets
2 tbsp butter
2 tbsp olive oil
3 cloves garlic (minced)
1 cup cherry tomatoes (halved)
2 tbsp fresh parsley (chopped)
1 tbsp lemon juice
Salt and black pepper to taste
½ tsp chili flakes (optional)

Directions:

Season the cod fillets with salt and black pepper.
Heat olive oil and 1 tbsp butter in a pan over medium heat.
Add the cod and sear for 3–4 minutes on each side until golden and cooked through. Remove and set aside.
In the same pan, add remaining butter and garlic, sauté for about 30 seconds until fragrant.
Add cherry tomatoes and cook until slightly softened.
Stir in lemon juice, chili flakes, and parsley.
Return the cod to the pan and spoon the sauce over the top.
Serve warm with extra sauce drizzled on top.

Ingredients:

2 cups fresh pineapple chunks
10–12 strips bacon, cut in half
2 tbsp honey
1 tbsp brown sugar
1 tsp chili flakes (optional, for a little heat)
1 tsp soy sauce
1/2 tsp black pepper
Toothpicks

Directions:

Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
Wrap each pineapple chunk with a half slice of bacon and secure with a toothpick.
In a small bowl, mix honey, brown sugar, soy sauce, chili flakes, and black pepper.
Arrange the wrapped pineapple on the tray and brush generously with the glaze.

12–16 large shrimp, peeled & deveined
1 cup mushrooms, sliced
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
¼ cup grated Parmesan cheese
1 tsp dried thyme (or fresh)
Salt & black pepper to taste
1 tbsp olive oil
Fresh parsley or thyme for garnish

Directions:

Preheat oven to 200°C (400°F). Cut puff pastry into squares and bake for 15–18 minutes until golden and puffed.
Heat olive oil in a pan, season shrimp with salt and pepper, and sear for 2–3 minutes per side until cooked. Remove and set aside.
In the same pan, melt butter and sauté garlic until fragrant. Add mushrooms and cook until soft.
Pour in heavy cream, add Parmesan and thyme, and simmer until the sauce thickens.

Directions:
