Mango Shrimp Salad Delight
Ingredients:
250g shrimp, peeled and deveined
1 ripe mango, diced
1 cup fresh lettuce or mixed greens
2 tbsp red onion, thinly sliced
1 tbsp fresh herbs (mint or cilantro), chopped
1 tbsp olive oil
1 tbsp lemon or lime juice
1 tsp honey
Salt and black pepper to taste
Chili flakes (optional)
Edible flowers for garnish (optional)
Directions:
Cook the shrimp in a pan with a little olive oil over medium heat for 2–3 minutes per side until pink and fully cooked. Let cool slightly.
In a bowl, combine diced mango, lettuce, red onion, and fresh herbs.
Add the cooked shrimp to the salad mixture.
In a small bowl, whisk together olive oil, lemon/lime juice, honey, salt, pepper, and chili flakes.
Pour the dressing over the salad and gently toss to combine.
Transfer to a serving glass or bowl and garnish with edible flowers if desired.
Serve fresh and enjoy!
