Reese's Peanut Butter Cup Cheesecake

Ingredients:
For the Oreo Cookie Crust:
1 ½ cups Oreo Cookies (approximately 28), finely crushed
½ cup Roasted Unsalted Peanuts, chopped (optional)
2 tablespoons Light Brown Sugar
⅛ teaspoon Salt
5 tablespoons Unsalted Butter, melted
For the Reese's Peanut Butter Cup Cheesecake Batter:
32 oz Cream Cheese, softened to room temperature
1 ½ cups Light Brown Sugar, firmly packed
½ cup Creamy Peanut Butter
1 teaspoon Vanilla Extract
¼ cup Heavy Whipping Cream
4 Large Eggs, room temperature and slightly whisked
10.5 oz Reese’s Miniature Peanut Butter Cups, chopped (1 small bag), plus extra for topping
For the Chocolate Ganache Topping (optional):
4 oz Semi-Sweet Chocolate Chips
⅓ cup Heavy Whipping Cream
Directions:
Prep the Crust: Preheat oven to 350ºF. Spray a 9-inch springform pan with baking spray and line with parchment paper. Pulse Oreo cookies, peanuts, brown sugar, salt, and melted butter in a food processor until blended. Press into the bottom of the pan and bake for 8-10 minutes. Cool on a wire rack and reduce oven temperature to 325ºF.
Make the Cheesecake Batter: Beat cream cheese until fluffy, then mix in brown sugar, peanut butter, and vanilla. Add whipping cream and eggs slowly, mixing until just combined. Fold in chopped Reese's cups.
Bake: Pour batter into the crust. Prepare a water bath and bake the cheesecake for 50-55 minutes at 325ºF. Let cool in the oven, then on a rack, and chill in the fridge for 4 hours or overnight.
Ganache Topping: Melt chocolate chips and whipping cream together, then spread over the cooled cheesecake. Top with extra Reese's cups.
