Our main corn producers Ulises and Janeth walking towards their corn fields in Tlaxcala, Mexico, with dog Wendy staying close by. It’s August and the corn is currently in its tender stage when it is perfect to eat fresh as elote. Tender corn, tender moment.

If there’s no color change it means your tortilla was dyed blue from chemical based food dyes. The petroleum based dye is added by tortilla producers in astonishing unregulated quantities most often free poured from 1 gallon containers into white gmo corn masa. Labeling is misleading and some brands don’t even list the blue dye as an ingredient. So do the “lime test” and make sure your blue corn tortilla is made from blue corn.

An “Artisan process” - Because artisan tortilla makers add Dextrose, Propionic Acid, Phosphoric acid, sodium Propionate, Cellulose Gum or Guar Gum, Benzoic acid, Fumaric Acid, Sprbic Acid and Enzymes to their masa.

Look if you want to make tortillas from adulterated masa that’s your choice but don’t try to attach the word artisan to them.
