We made this for our family reunion this summer and they were a huge hit! Tried them for meal prep this week and they have been amazing to reheat in the air fryer and everyone is loving them!! Such an amazing meal any time of day! 🤩
Flat Top Hash Brown Omelets
Ingredients:
1 (30 oz) bag frozen shredded hash browns, thawed
8–10 eggs, beaten
1–1½ cups diced ham
½ cup diced onion (optional)
½ cup diced bell peppers (optional)
1½ cups shredded cheddar cheese
3–4 Tbsp butter, divided
Clean Monday Meals Everyday Beef or SPOG seasoning
Directions
1. Preheat your flat top to medium-high heat. Add about 2 tablespoons butter or oil and spread it around the griddle.
2. Make the hash brown base. Divide the hash browns into large, thin rectangle on the griddle. Season generously with seasoning. Let them cook without messing with them for 4–5 minutes, until the bottoms are golden and crispy.
3. Add the eggs. Pour the beaten eggs evenly over each hash brown rectangle. Top with diced ham, and shredded cheese.
4. Fold & crisp. Once the eggs are mostly set and the cheese is melting, use your spatulas to carefully fold each hash brown omelet in half.
Serve hot with salsa, hot sauce, ketchup, avocado—or honestly just eat it straight off the Blackstone. 😂
🔥 TIP: The secret is getting the hash browns into a thin, even layer and leaving them alone long enough to get really crispy before adding everything else.
