Makes 10–12 fritters

For the batter:
• 1 cup (240g) sourdough discard
• 1 cup (125g) all-purpose flour
• ¼ cup (50g) sugar
• 1½ tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon
• ¼ tsp nutmeg
• 1 egg
• ¼ cup (60ml) milk
• 1 tsp vanilla
• 1 tbsp melted butter

For the apples:
• 1½ cups (180g) peeled, finely diced apples
• 1 tbsp brown sugar
• ½ tsp cinnamon
• 1 tsp lemon juice

For the glaze:
• 1 cup (120g) powdered sugar
• 1½–2 tbsp milk
• ½ tsp vanilla
• Pinch of salt

Let’s make them:

2. Whisk together the sourdough discard, egg, milk, vanilla, and melted butter.
