We recently harvested almost 10 gallons of delicious spring honey. Spring honey and fall honey differ in both flavor and floral source, making each unique. Spring honey is typically lighter in color and has a delicate, floral taste, thanks to nectar collected from early-blooming flowers like clover, dandelion, and fruit blossoms. In contrast, fall honey is darker, richer, and more robust, often sourced from goldenrod and asters. Spring honey’s mild flavor makes it perfect for everyday use, and its high pollen content can help ease seasonal allergies.
