Chicken Meatloaf 🤤 Wishing you all many blessings and prosperity today & everyday!

Serves: 4-6
Calories: 364 per slice

🥣 Ingredients:

2 pounds ground chicken
½ Cup grated Parmesan cheese
⅓ Cup panko breadcrumbs
2 large eggs
4 garlic cloves, minced
1 tsp garlic powder
1 tsp onion powder
0.5 tsp dried basil
0.5 tsp dried parsley
0.5 tsp fine salt
0.5 tsp ground black pepper
¼ Cup whole milk

🫙→ Garlic Parmesan Glaze
¼ Cup unsalted butter
2 garlic cloves, minced
2 Tablespoons grated Parmesan cheese
1 tbsp finely chopped parsley
Pinch of fine salt

✍️ Directions:

1. Preheat oven to 190°C. Line a baking sheet with parchment or lightly grease a loaf pan.

2. In a large bowl, thoroughly mix ground chicken, Parmesan, panko, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk until evenly combined but not overmixed.

3. Form the mixture into a loaf and transfer to the prepared baking sheet or press into a loaf pan.

4. Bake for 40–45 minutes, ensuring the internal temperature reaches 74° C or 165° F.

5. While baking, melt butter over medium heat in a small saucepan. Add minced garlic and sauté for 1–2 minutes. Stir in Parmesan and parsley; cook another 1–2 minutes until slightly thickened. Season with a pinch of salt.

6. Brush the baked meatloaf generously with the glaze and return to the oven for an additional 5–7 minutes.

7. Remove and allow meatloaf to rest for 5 minutes before slicing. Garnish with additional parsley and serve.

Cheesy Bowtie Casserole with Italian Ground Beef, Cheddar & Marinara

Ingredients:

12 oz bowtie (farfalle) pasta
1 lb ground beef
1 jar (24 oz) marinara sauce
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
½ tsp garlic powder
½ tsp onion powder
1 tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
1 tbsp olive oil
Optional: chopped parsley or basil for garnish

Directions:

1. Bring a large pot of salted water to a boil. Cook the bowtie pasta according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned and fully cooked, breaking it up as it cooks. Drain off the excess grease.
3. Season the beef with garlic powder, onion powder, Italian seasoning, crushed red pepper flakes (if using), salt, and pepper. Stir to mix everything together.
4. Pour in the marinara sauce and stir well. Let it simmer on low for 5–7 minutes to bring the flavors together.
5. Add the Velveeta cubes to the skillet and stir gently until the cheese is melted and the sauce is creamy and smooth.
6. Add the cooked bowtie pasta to the sauce and gently toss to coat every piece with that cheesy beef marinara goodness.
7. Sprinkle mozzarella cheese over the top. Cover the skillet and let it sit for 2–3 minutes until the cheese is melted. For a golden top, you can broil it for a few minutes.
8. Garnish with fresh parsley or basil if you’d like, and serve hot while everything’s creamy and melty.

Cajun Garlic Butter Chicken over Creamy Parmesan Linguine (steak can be used as well) 😋🔥

Ingredients:

1.5 lbs sirloin or ribeye steak or cooked browned Chicken, cut into thin strips
12 oz linguine pasta
4 tbsp butter, divided
4 cloves garlic, minced
1 tsp Cajun seasoning
½ tsp crushed red pepper flakes (adjust for heat)
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)

Directions:

Cook the linguine in a large pot of salted boiling water until al dente. Drain and set aside.
In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the steak, Cajun seasoning, red pepper flakes, salt, and black pepper. Cook for 4–6 minutes, stirring occasionally, until the steak is browned. Remove the steak from the skillet and set it aside or warm youe chicken
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
Lower the heat and pour in the heavy cream. Let it simmer gently for 2–3 minutes, then stir in the Parmesan cheese until the sauce is smooth and creamy. Add a little salt and pepper if needed.
Add the cooked pasta and steak back to the skillet. Toss everything together until well coated in the sauce.
Serve warm, garnished with chopped parsley and more Parmesan if you like.

1 lb large shrimp (peeled and deveined)
12 oz smoked sausage (sliced)
½ head green cabbage (chopped)
1 small onion (sliced)
1 red bell pepper (chopped)
1 carrot (sliced)
3 cloves garlic (minced)
2 tbsp olive oil or butter
1 tsp paprika
½ tsp red pepper flakes (optional)
Salt and black pepper to taste
½ cup chicken broth or water
Cooked white rice (for serving)

Directions:

Step 1: Brown the sausage:
In a large skillet over medium heat, add sausage slices and cook until browned. Remove and set aside.
Step 2: Sauté vegetables:
In the same pan, add oil/butter. Sauté onion, bell pepper, cabbage, and carrots until softened (about 10 minutes). Add garlic and cook 1 more minute.

Creamy Beef Spaghetti with 3-Cheese Parmesan Sauce 😋

Cooking Time: 30 minutes
Servings: 4-6

Ingredients:

1½ lbs ground beef
12 oz spaghetti
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
Salt & pepper to taste
4 cloves garlic, minced
1 cup heavy cream
¾ cup grated Parmesan cheese
1 cup shredded cheddar or mozzarella cheese
½ cup reserved pasta water (if needed to thin sauce)
Fresh parsley or green onions, for garnish

Directions:

1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Before draining, scoop out about ½ cup of the pasta water in case you need it later to thin the sauce. Set the pasta aside.

2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until it’s fully browned and no longer pink.
Sprinkle in the Cajun seasoning, smoked paprika, onion powder, garlic powder, and a bit of salt and pepper. Stir everything together so the beef is well coated in all those spices.

3. Add the minced garlic and cook for about 1 minute, just until it smells amazing. Pour in the heavy cream and stir in the Parmesan and cheddar (or mozzarella) cheese. Let it simmer gently for a few minutes, stirring often, until the sauce turns creamy and smooth. If it seems too thick, add a splash of the reserved pasta water to loosen it up.

4. Add the cooked spaghetti to the skillet and toss it with the cheesy Cajun beef sauce until everything is well mixed and coated.

Top with chopped parsley or green onions on top, and serve it warm.

Pot Roast with Vegetables… oh so good 😋

Ingredients:

1 (3-3½ lb) Boneless Chuck Roast
½ tablespoon Garlic Salt
½ tablespoon Garlic Powder
2 tablespoons Canola oil
⅛ tablespoon Marjoram
⅛ tablespoon Thyme
2 cups Beef Broth
2 tablespoons Worcestershire Sauce
1 Bay Leaf
½ cup Red Wine or Red Cooking wine
2 cups Baby Carrots (whole or cut into 2 inch pieces)
2 cups Celery (chopped into 2 inch pieces) optional
2 Garlic Cloves (minced)
3 cups small Yukon potatoes (diced, skin removed)
1 tablespoon Salt and Pepper to taste
Enough water to keep beef submerged

Directions:

1. Season beef with salt, pepper, garlic salt and powder.
2. In a large pot, add oil. Over High heat, place beef in pot and brown on all sides. 4-5 minutes per side.
3. Pour in broth, wine and remaining seasonings. Bring to a rapid boil.
4. Drop in your bay leaf, cover and cook for 2-3 hours. Add 1 C more water every 30 minutes as necessary.
4. Last 30 mins of cooking add your vegetables, bring broth back to a boil, then lower and remove lid to thicken sauce. Once done, remove bay leaf.
5. Using two forks, shred beef into sauces so
they can absorb throughout. Serve.

PRO TIP: If using a slow cooker, cook beef pot roast for 7-8 hours over low, or 3-4 hours over high.
Do not add potatoes until last thirty minutes of cooking or they will become mushy and overpower your pot roast.
