Cube Steak With Gravy And Potatoes (Ww)

INGREDIENTS:
• 1 lb potato, peeled and cut into chunks
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 4 tablespoons flour
• 1 1/2 cups beef broth
• 4 (1/4 lb) cube steak
• 1 (8 ounce) package mushrooms, sliced

PREPARATION:
Step 1. In a pot bring water and potatoes to a boil; cover and simmer 10 minutes or until tender. Drain, reserving 1/2 cup liquid. Return potatoes to pan and add 1/4 tsp salt. Mash potatoes using 1/3 - 1/2 cup of the potato liquid.

Step 2. In a measuring cup mix together broth and 2 tablespoons flour.

Step 3. Coat steaks with remaining flour (2 TB), 1/4 tsp salt and the pepper.

Step 4. Spray skillet with Pam and set over high heat. Add steaks and cook 2 minutes per side.

Step 5. Stir in mushrooms and broth mixture; bring to a boil. Cover and simmer 20-30 minutes. Uncover and cook until gravy thickens.

Step 6. Serve with mashed potatoes.

Keto Shrimp Scampi With Broccoli Noodles

INGREDIENTS:
• 2 large heads broccoli with long stems
• 2 tablespoons olive oil, divided
• salt and ground black pepper to taste
• 2 cloves garlic, minced
• 1 pound raw shrimp, peeled and deveined
• 2 tablespoons dry white wine
• 2 tablespoons lemon juice
• 2 tablespoons butter
• 1 tablespoon minced fresh basil
• 1 tablespoon chopped fresh chives
• ½ teaspoon crushed red pepper

PREPARATION:
Step 1. Cut off broccoli florets and save for another use. Cut woody ends off the stems. Shave large knots off the stems using a vegetable peeler so that they are as uniform as possible. Cut into noodles using the smallest blade on a spiralizer.

Step 2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add broccoli noodles, salt, and pepper; toss for 3 minutes. Remove from heat and set aside.

Step 3. Heat remaining olive oil and garlic in a separate skillet over medium heat. Cook for 1 minute. Add shrimp and cook until opaque, about 3 minutes per side. Transfer shrimp to a bowl.

Step 4. Add wine, lemon juice, butter, basil, chives, and red pepper to the skillet. Whisk over medium heat for 3 minutes. Return shrimp to the skillet and toss to coat.

Step 5. Spoon broccoli noodles into 4 serving bowls. Top with shrimp mixture.

Dark Mocha Crinkles

INGREDIENTS:
• 1 cup butter, at room temperature
• ¾ cup brown sugar
• ? cup white sugar
• ¼ cup instant coffee powder
• 2 eggs
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• ¾ cup cocoa powder
• 1 teaspoon baking soda
• ½ teaspoon salt
• ½ cup white sugar
• 24 dark chocolate wafers

PREPARATION:
Step 1. Preheat the oven to 375°F (190 degrees C). Line 2 baking sheets with parchment paper.

Step 2. Combine butter, brown sugar, 1/3 cup sugar, and coffee powder in a large bowl; beat with an electric mixer until creamy. Blend in eggs and vanilla extract. Mix in flour, cocoa powder, baking soda, and salt together until dough is uniform.

Step 3. Pour 1/2 cup sugar onto a shallow plate. Shape dough into 2-inch balls and roll in the sugar until coated. Arrange on the prepared baking sheets.

Step 4. Bake in the preheated oven until edges are set, about 10 minutes. Immediately press a dark chocolate wafer into each cookie. Let cool on a wire rack.

Tropical Cheesecake

INGREDIENTS:
• 1 cup flaked coconut
• 1/4 cup chopped almonds
• 2 tablespoons melted butter
• 2 (8 ounce) packages cream cheese
• 1 cup sugar
• 3 tablespoons cornstarch
• 3 eggs
• 1 cup sour cream
• 3 tablespoons lemon juice
• 2 teaspoons vanilla
• 1/4 teaspoon almond extract
• 1/3 cup apricot jam
• 1/2 cup pineapple tidbits
• 2 -4 sliced kiwi
• 3/4 cup toasted coconut

PREPARATION:
For crust:
Step 1. Mix crust ingredients together and press into the bottom of a 9 inch spring form pan.

Step 2. Bake at 350 for 10 minutes and cool.

Filling:
Step 1. All ingredients should be brought to room temperature.

Step 2. Beat cream cheese and sugar till smooth.

Step 3. Add cornstarch and beat well.

Step 4. Add eggs, and beat on low for just till combined.

Step 5. Add sour cream, lemon juice, and extracts.

Step 6. Beat just till blended.

Step 7. Pour over crust and bake 350° for 45-50 minutes or till center is almost set.

Step 8. Cool 1 hour and refrigerate overnight.

Step 9. Next day remove the sides of the pan.

Step 10. Heat jam in sauce pan.

Step 11. Arrange fruit over top of cheesecake.

Step 12. Brush entire cake w/ jam, and then press the toasted coconut onto the sides of the cake.

Step 13. Prep time does not include refrigeration.

Apple Peanut Butter Breakfast Cookies

INGREDIENTS:
• 1 cup butter flavor shortening
• 1 cup crunchy peanut butter
• 3/4 cup granulated sugar
• 3/4 cup firmly packed brown sugar
• 2 eggs, beaten
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1 3/4 cups uncooked quick oats
• 1 1/4 cups raisins
• 1 medium granny smith apple, finely grated, including juice
• 1/3 cup finely grated carrot
• 1/4 cup flaked coconut (optional)

PREPARATION:
Step 1. Preheat oven to 350°F Place sheets of foil on countertop for cooling cookies.

Step 2. Combine shortening, Peanut Butter and sugars in large bowl.

Step 3. Beat at medium speed with electric mixer until blended.

Step 4. Beat in eggs.

Step 5. Combine flour, baking powder, baking soda and cinnamon.

Step 6. Add gradually to creamed mixture at low speed.

Step 7. Beat until blended.

Step 8. Stir in oats, raisins, apple, carrot and coconut.

Step 9. Drop by measuring tablespoonfuls onto ungreased baking sheet.

Step 10. Bake for 9 to 11 minutes or until just brown around edges.

Step 11. Do not overbake.

Step 12. Cool 2 minutes on baking sheet.

Step 13. Remove cookies to foil to cool completely.

Lemon Poppy Seed Noodles

INGREDIENTS:
• 6 ounces wide egg noodles
• 1 1/2 teaspoons poppy seeds
• 1 1/2 tablespoons unsalted butter
• 1/2 teaspoon finely grated fresh lemon zest
• 2 tablespoons fresh chives

PREPARATION:
Step 1. Cook noodles as directed on package.

Step 2. While noodles are cooking, lightly toast poppy seeds in a dry small skillet over moderately low heat, stirring, until just fragrant, about 2 minutes.

Step 3. Reserve 1/2 cup cooking water and drain noodles in a colander.

Step 4. Add butter and zest to warm pot and swirl until melted.

Step 5. Add noodles and toss, adding enough of reserved cooking water to keep noodles moist, then stir in poppy seeds, chives, salt and pepper to taste.

Vanilla Simple Syrup

INGREDIENTS:
• 1/2 cup sugar
• 1 cup water
• 1 vanilla bean, cut in half lengthwise, seeds removed, pod reserved

PREPARATION:
Step 1. In a small saucepan, over medium heat combine the sugar, water, vanilla bean seeds, and vanilla pod.

Step 2. Bring to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the sugar has dissolved, about 5 minutes.

Step 3. Remove the pan from the heat and allow the syrup to cool, about 20 minutes.

Step 4. Strain before using.

Yield:
Step 1. 1 cup.

• 1 stalk celery, chopped
• 2 pounds ground pork
• 2 pounds ground beef
• 8 serrano chile peppers, diced
• 3 (14.5 ounce) cans diced tomatoes
• 1 (4.5 ounce) can diced green chile peppers
• 3 (6 ounce) cans tomato paste
• 2 (15 ounce) cans kidney beans
• 6 tablespoons minced garlic
• 1 fluid ounce key lime juice
• 4 fluid ounces tequila
• 16 fluid ounces beer
• 2½ tablespoons chili powder
• salt and pepper to taste

PREPARATION:
Step 1. Heat the olive oil in a large pot over medium heat. Stir in the red bell pepper, yellow bell pepper, green bell pepper, orange bell pepper, onion, and celery. Cook until tender. Place pork and beef in the pot, and cook until evenly brown. Drain grease.

Step 2. Mix serrano chile peppers, diced tomatoes, green chile peppers, tomato paste, kidney beans, garlic, lime juice, tequila, and beer into the pot. Season with chili powder, salt, and pepper. Bring to a boil. Reduce heat to medium-low, and simmer 5 hours.

Baked Brie With Kahlua And Pecans

INGREDIENTS:
• 3/4 cup chopped pecans
• 1/4 cup Kahlua
• 3 tablespoons brown sugar
• 1 (14 ounce) brie cheese

PREPARATION:
Step 1. Microwave pecans 1 1/2 minutes.

Step 2. Mix with Kahlua and brown sugar.

Step 3. Spread on brie.

Step 4. Microwave an additional 2 minutes; or bake at 350 until the topping is bubbly.

Step 5. Serve with crackers and/or apple and pear wedges.
