FRENCH ONION SOUP - A perfect complement to a full course meal or by it's self with a sandwich and a salad or chips. Enjoy!

FRENCH ONION SOUP

2 medium onions
1 teaspoon sugar
6 tablespoons butter, divided
1 tablespoon flour
1/8 teaspoon pepper
Dash of ground nutmeg
2 1/2 cups beef broth
2 slices French bread (1 inch thick)
4 slices Provolone cheese

Saute onions and sugar in 4 tablespoons of butter until golden brown. Stir in the flour, pepper and nutmeg until blended. Gradually stir in broth. Bring to a boil and stir for 2 minutes. Reduce heat and simmer 30 minutes.
In a skillet, melt remaining butter. Coat the bread on all sides and cook until golden brown on both sides. Ladle soup into ovenproof bowls. Top with one slice of cheese, then one slice of bread and another slice of cheese. Bake 375 for 10 minutes or until cheese is bubbly.

Blonde Brownie Nut Squares - YUM!!!! And so easy!

Next time I make these, and there will be a next time, I am going to replace the nuts with chocolate chips!

BLONDE BROWNIE NUT SQUARES

1/4 cup butter (no substitutes) melted
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
3/4 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 chopped pecans

Beat the butter, sugar, egg and vanilla. Combine the flour, baking powder and salt. Gradually add to sugar mixture and mix well. Fold in nuts. Spread into a greased 8x8 pan. Bake 350 for 20-25 minutes. Cool and cut into squares.

I always keep a package of frozen dinner roll dough in my freezer. There are so many things to make other than dinner rolls! Today I made "Sicky Buns" using 8 rolls.

STICKY BUNS

8 frozen bread dough rolls
1/4 cup butter
1/3 cup sugar
3 tablespoons brown sugar
1/4 teaspoon cinnamon
1/3 cup Heavy Cream

Thaw rolls 10 minutes or until each roll can be cut into 4 pieces. In a saucepan melt butter. Add both sugars and cinnamon. Add heavy cream. Simmer for 1 minute. Add rolls and stir to coat. Transfer into a greased 8x8 pan. Cover with a dish towel and let rise 8 hours or overnight. Bake 350 for 25-30 minutes. Invert onto a serving plate and enjoy!!!

HERBED POTATO WEDGES - A great alternative to plain ol' potatoes. Also makes a great app for game day or a late night snack.

HERBED POTATO WEDGES

3 Tablespoons grated Parmesan cheese
1 Tablespoon Italian Seasoning
1/4 teaspoon salt (optional)
1/4 teaspoon pepper
1 large unpeeled baking potato, cut into wedges
1 Tablespoon olive oil

Place Parmesan cheese and all seasonings in a zip lock bag. Shake to mix well. Place oil in another zip lock bag. Put potato wedges in oil bag. Coat potato wedges well. Remove and put in cheese and seasoning bag. Shake to coat well. Place on a greased sheet pan. Bake, uncovered, at 400 degrees for 20-25 minutes or until tender.

CRAB PASTA SALAD

2/3 Cup spiral pasta
1 Cup imitation crabmeat, diced
1/3 Cup broccoli florets
3 Tablespoons chopped seeded tomato
2 Tablespoons chopped green pepper
1 Tablespoon finely diced onion
3 Tablespoons mayonnaise
1 Tablespoon prepared Italian salad dressing
1/4 teaspoon grated Parmesan cheese

Cook pasta according to package directions. Drain & rinse in cold water. In a bowl, combine mayonnaise, salad dressing and Parmesan cheese. Add all other ingredients. Toss gently to coat. Enjoy!!!

Craving Macaroni and Cheese? This one is for you!

EASY MACARONI AND CHEESE

1/3 cup Sour Cream
1/3 cup Heavy Cream
1 cup shredded Colby & Monterey Jack Cheese
1/4 teaspoon salt
3/4 cup Macaroni (I used Cavatappi Macaroni because I love the spiral look and it is FUN!) But any Macaroni will work.
Soft Bacon bits (from the bag) or 1 slice cooked and diced bacon

Cook Macaroni aldente. Combine sour cream, milk and salt. Add shredded cheese. Add cooked Macaroni and stir well. Transfer into a greased 4 cup baking dish. Cover and bake at 325 degrees for 25 minutes. Removed from oven. Add bacon bits and cook another 5 minutes. Great dish for the main course or as a side.

I love these Buttermilk Biscuits made by Pillsbury. 20 frozen little Biscuits to a bag. Make 2 or all 20 if you need. No more wasted Biscuits because you make up what you need. In the freezer section at your local grocery store. And they cook up nice in the Air Fryer.

Tomato Pasta Toss - a great alternative to Macaroni Salad! Fire up the grill, throw on a steak, add this to the side and call it dinner!

TOMATO PASTA TOSS

1 1/2 cups uncooked bow tie pasta
1 medium tomatoe, chopped
1 garlic clove, minced. (I used 1 tsp. minced garlic from the jar)
2 tablespoons olive oil
2 tablespoons shredded Parmesan cheese
Salt and pepper to taste

Cook pasta according to package directions. Combine tomatoe, garlic, oil, salt and pepper. Drain pasta, rinse in cold water. Add pasta to tomato mixture. Sprinkle with Parmesan cheese, toss to coat.

Rice Krispy Bars - just the right amount for 2!

3 tablespoons butter
3 c. Mini marshmallows
3 c. Rice Krispy cereal

Butter a 3 cup casserole dish generously. (Or a 9x5 loaf pan will work)
Melt butter over low heat. Add marshmallows. Stir until melted. Don't over cook.
Turn off heat and add cereal. Stir until coated. Transfer into prepared pan. Cool about 1 hour.

Breakfast Sausage Casserole - perfect amount for 2. Pair it up with some crispy hash browns, a muffin and some fresh fruit and it will make a perfect Sunday brunch. And your hearty eater will be stuffed!

BREAKFAST SAUSAGE CASSEROLE
6 Oz. Ground pork sausage, cooked & drained.
1 large egg
3/4 c. Milk
1/8 tsp salt
1/8 tsp pepper
2 c. Cubed bread
1/2 c shredded cheese

Cook sausage. Mix egg, milk, salt & pepper. Butter a small casserole dish. (I used a 3 cup casserole dish) Put bread cubes in dish. Put cheese on top of bread cubes. Sprinkle cooked sausage on top. Pour egg mixture on top. Cover and refrigerate over night. Remove from fridge 30 minutes before cooking. Bake 30 minutes at 350 degrees covered in foil. Remove foil and Sprinkle with a little more cheese if you wish. Bake another 10 minutes uncovered. Let sit 5-10 minutes before slicing.

It didn't take me long to discover cooking for 1 or 2 and using my casserole dishes, etc. that I have been using for years just do not work well with smaller recipes. I am a frugal person so I like to check out my local Goodwill store. My local store offers 25% off on Wednesdays for seniors (50+ years and older) so I head there every Wednesday for Senior Day and look for smaller portion dishes. Usually most items are just a couple of dollars. And take 25% off, you have yourself a pretty good deal!
