If you’ve ever forgotten to thaw chicken (because…same 😅), this is about to save your week. This method gives you juicy, tender shredded chicken every single time and makes meal prep so much easier.

🍗 Easy Instant Pot Frozen Chicken Recipe

Ingredients:
• 3 frozen boneless skinless chicken breasts
• 2 cups Better Than Bouillon vegetable broth (for 3 chicken breasts, 1 cup is usually enough—2 cups works great if making 6 breasts or if you want extra liquid for juicy shredded chicken)

Instructions:
1. Add frozen chicken breasts to Instant Pot.
2. Pour broth over chicken.
3. Select Manual/Pressure Cook for 20 minutes.
4. Let the Instant Pot do its thing.
5. Remove chicken and shred using a hand mixer for super quick shredded chicken.

✨ Everyone makes it a little differently, and this is how I make mine!

Some call it Spanish Rice 🌶️ and some call it Mexican Rice 🇲🇽🍅 — what do YOU call it? Drop a comment below: Spanish rice or Mexican rice? 👇

Tonight’s comfort food lineup:🍚 Easy Spanish/Mexican Rice🫘 Tex-Mex Pinto Beans (Instant Pot)

🍚 Spanish/Mexican RiceIngredients:• 1 cup rice• 1 tbsp olive oil• 1 (10 oz) can Rotel• Water (enough to equal 2 cups total liquid with Rotel)

Instructions:

Sauté rice in olive oil until grains start turning slightly white.

Add Rotel + enough water to make 2 cups liquid total.

Bring to a boil.

Cover and cook 20 minutes.

🫘 Tex-Mex Pinto Beans (Instant Pot)Ingredients:• 1 lb pinto beans, rinsed & sorted• 5 cups water• 1 large onion, chopped• 3 whole garlic cloves (or minced)

Seasonings:• 1 tsp cumin• 1 tsp coriander• 1 tsp smoked paprika• 1 tsp chili pepper• 1 tsp black pepper

Instructions:

Add all ingredients to Instant Pot.

Set to Manual/Pressure Cook for 30–40 minutes.

I found 35 minutes is the sweet spot for perfectly tender beans.

Remove whole garlic cloves after cooking if desired.

Simple, filling, and perfect for meal prep or taco night 🌮✨

What’s for dinner? Well tonight it’s an easy and fresh ingredient one. Lots of flavors. A bright tasting salad with flavors of zesty lemon and tajin. Pairing nicely with baked chicken drumsticks. Flavor with your favorite seasoning or bbq sauce. Then check out the Costco finds. Recipe at end for the salad.

There’s nothing like making your home smell warm, cozy, and inviting 🍊✨
This simmer packet is my go-to for an easy, natural way to freshen the house—no sprays, no chemicals.

What’s inside:
• Dehydrated orange slices
• Craisins
• Cinnamon sticks
• A sprig of rosemary

Add 5 cups of water to a pot, bring to a boil, then turn it down and let it simmer. Refill water as needed and enjoy the cozy vibes all day long 🫶

Super simple fresh salad, using cucumbers, cherry tomatoes, scallions, and frozen corn. Your dressing is going to be really easy using lime juice, salt,tajin and top with cilantro. Give it a mix and enjoy fresh.

Ingredients:
- 6 mini cucumbers
- 12-13 cherry tomatoes quarter
- 5 scallions chopped (ends and 1/2 tops removed)
- 1 jalapeno seeded and chopped
- 1/4 cup frozen corn kernels

Dressing:
- 3 TBLS fresh cilantro
- juice of 2 limes.
- salt to taste
- Tajin to taste.

 Mix it all together enjoy this

• 2 tablespoons (30 ml) olive oil
• 2 cans of tuna (340 g), flaked
• 2 tablespoons of fresh cilantro, finely chopped
• 2 tablespoons (30 ml) tahini sauce
• 3 tablespoons (45 ml) gluten-free tamari sauce or coconut aminos
• 1 tablespoon (15 ml) sesame oil
• 6 grape tomatoes, quartered
• 2 scallion onions, chopped

Instructions
1. Prepare the Tahini Tamari Paste:
• Mix together the tahini sauce, tamari sauce, and sesame oil.
2. Prepare the Tuna Salad:
• Mix the lime juice, cilantro, olive oil, tuna, quartered grape tomatoes, and chopped scallions together.
3. Assemble the Bowl:
• Place the diced avocado into a bowl.
• Top with the tuna salad and tahini tamari paste.

✅ Save this Keto Friendly Recipe - Instant Pot Mixed Berry Cinnamon Crisp with Whipped Cream
⭐️ This recipe came together super easy and is way easier than it sounds.
Ingredients

For the Crisp:
• 4 cups frozen, unsweetened blueberries.
• ⅓ cup erythritol or Swerve sweetener, divided
• 1 tsp xanthan gum
• ⅓ cup almond flour
• ¼ cup unsweetened finely shredded coconut
• ½ tsp ground cinnamon
• 4 tbsp butter, melted

For the Topping:
• ⅓ cup heavy cream
• ¼ tsp stevia extract

Directions:
1. Prepare your bakeware:
• Use the bonCOOK small round mold to assemble the recipe. After ingredients are added you will cover the mold with the octagonal bonMAT to keep excess moisture off the ingredients.
• Alternative: If you don’t have bonCOOK bakeware, use a 7-inch round baking dish. Cover it with a paper towel and then tightly wrap with tin foil to lock in moisture and prevent sogginess.

2. Assemble the crisp:
• In a large bowl, combine the mixed berries, ⅓ cup sweetener, and xanthan gum. Toss gently to coat the berries and transfer the mixture to your prepared mold or baking dish.
• In another bowl, mix the almond flour, coconut, remaining sweetener, cinnamon, and melted butter until crumbly. Spoon this topping over the berries.

3. Bake using a pressure cooker:
• Place the mold on the steam rack in the inner pot of a pressure cooker. Add 1 cup of water to the bottom of the pot. Cover with the lid and set to Pressure Cook (High) for 15 minutes. Quick-release the pressure when done.

4. A few minutes before the crisp is done, ☑️ prepare your air fryer at 400°.
After the pressure cooker finishes, remove the foil (if using) or bonMAT. Put the crisp in the air fryer for 5 minutes.

5. Cool and prepare whipped cream:
• Allow the crisp to cool for at least 30 minutes.
• Meanwhile, whisk the heavy cream and stevia in a medium bowl using an immersion blender until soft peaks form.
6. Serve:
• Scoop the crisp into serving bowls and top with whipped cream. Serve warm.

✨Christmas Cranberry Squares✨
These little jewels are perfect for holiday gatherings—sweet, tangy, and packed with festive flavor.

📋 Recipe:
• 1 C flour
• 2 T brown sugar
• 1/3 C butter
• 1 C chopped nuts (divided)
🌲
• 1 1/4 C sugar
• 2 T flour
• 2 eggs
• 2 T milk
• 1 t vanilla
• 1 C chopped cranberries
• 1/2 C coconut
• 1 T grated orange peel

Steps:
1️⃣ Combine flour, brown sugar, 1/2 C nuts, and butter. Blend until crumbly. Press into an ungreased 13x9 inch pan (or your favorite bonCOOK bakeware like I did!). Bake at 350°F for 12-15 minutes.
2️⃣ Mix sugar, flour, eggs, milk, and vanilla. Stir in cranberries, coconut, orange peel, and remaining nuts.
3️⃣ Spread mixture over the baked crust and bake an additional 25-30 minutes. Cool, cut into squares, and enjoy!
