A butler’s pantry was never designed to hold w**e.

This one sits just off the dining room, in a footprint built for serving ware and linens. Converting it into a refrigerated cellar meant working within fixed walls, existing openings, and a space the homeowners walk past every day.

The walnut racking was built to fit those dimensions exactly. Stone countertops give the room a working surface for decanting and serving, and gold hardware ties the cellar back to the dining room it opens onto.

Cave a' Vin handled the design and installation. We built the racking.

Our shop team in Greenville, South Carolina. Some of them have been here for years. Most of them could tell you which cellar they built just by looking at the joinery.

Guests notice the w**e room. Operators notice whether it was built by someone who understands service.

The Greggory in South Barrington, IL was built by restaurateurs who know exactly what a dining room has to deliver on a busy night.

Guests see the w**e room as part of the experience. The glass, the lighting, the collection on display as they walk to their table.

The team sees something different. A server pulling a bottle mid-service. A sommelier reaching for a vintage during a full seating. A manager running inventory after close. For them, the room either works or it slows the night down.

We built The Greggory’s w**e storage for both audiences.

That meant thinking through how staff move through the space. Which bottles need to be within reach and which can live higher. How labels face so a bottle can be identified without pulling it. How the racking holds up to constant daily use, not occasional browsing.

It also meant building to a restaurant opening timeline. Every Kessick W**e Cellars cabinet is assembled, mocked up on our shop floor, and labeled by wall before it ships. When it arrives on site, the install crew knows exactly where each piece goes.

Less than a year after opening, The Greggory was named to North America’s 50 Best Steak Restaurants. We are proud our work is part of that room.
