Fresh Strawberry Pie
Strawberry season is short, and the first good box of berries every June goes straight into this pie.

Ingredients
1 baked 9-inch pie crust, cooled
2 lb fresh strawberries, hulled
1 cup granulated sugar
3 tablespoons cornstarch
1 cup water
3 tablespoons strawberry gelatin powder
Pinch of salt
1 cup heavy cream
2 tablespoons powdered sugar

Directions
1. Rinse, hull and pat the strawberries dry. Halve any very large ones.
2. Whisk the sugar, cornstarch and salt in a saucepan, then whisk in the water. Bring to a boil over medium heat, stirring, and cook 2 minutes until thick and clear.
3. Take the pan off the heat and whisk in the gelatin until dissolved. Cool about 15 minutes, until just warm.
4. Fill the crust with the strawberries, pointed ends up, piling them high in the middle.
5. Spoon the glaze over the berries so every one is coated.
6. Chill at least 3 hours, until the glaze is set.
7. Whip the cream with the powdered sugar to soft peaks and pipe a swirl on each slice.

It is a good one to keep in mind for a weekend cookout.

Crab Stuffed Cheddar Bay Biscuits with Lemon Butter
What do you make when friends come over for seafood night and you want one plate that does it all?

Ingredients
For the biscuits:
2 cups all-purpose flour
1 tbsp baking powder
1 tsp sugar
1 tsp garlic powder
½ tsp salt
½ cup cold butter, cubed
1½ cups shredded sharp cheddar
1 cup cold buttermilk
For the crab filling:
1 lb lump crab meat
4 oz cream cheese, softened
2 tbsp mayonnaise
1 tsp seafood seasoning
1 tsp lemon zest
For the lemon butter:
½ cup butter
2 cloves garlic, minced
2 tbsp lemon juice
1 tbsp chopped fresh parsley
Pinch of salt

Directions
1. Heat the oven to 425°F and grease four 10-oz ramekins.
2. Gently fold the crab, cream cheese, mayonnaise, seafood seasoning and lemon zest together so the lumps stay whole.
3. Whisk the flour, baking powder, sugar, garlic powder and salt. Cut in the butter until it looks like coarse crumbs, then stir in the cheddar and buttermilk just until a sticky dough forms.
4. Press half the dough into the ramekins, spoon in the crab and cover with the rest of the dough, pinching the edges closed.
5. Bake 22–25 minutes, until the tops are deep golden and a toothpick in the dough comes out clean.
6. Melt the butter with the garlic for 1 minute, then stir in the lemon juice, parsley and salt. Run a knife around each ramekin, lift the biscuits onto plates, brush the tops and spoon the rest around them.

What would you serve next to it, a green salad or corn on the cob?
