What's something you'd tell or best advice someone who's nervous to start sewing?

I’m about to teach a kids sewing class (8-16 yo) 1 evening and 1 weekend & then will offer a class for adults as well. (During school days) any best projects you would suggest for each group? (Im starting with doing scrappy jeans w/ younger kids)
