This Haitian Savory Rice and Beans recipe is a family favorite! My friend always says it reminds her of her grandmother's home cooking. It's so full of flavor; you'll want to make it again!
Ingredients:
- 1 cup dried kidney beans (or black beans)
- 4 cups water
- 1 cup long-grain rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon thyme (fresh or dried)
- 1 teaspoon allspice
- Salt and pepper to taste
- 1 bay leaf
- 1 tablespoon vinegar (optional)
- 1 green onion, chopped for garnish
Instructions:
1. Rinse the kidney beans and soak them in water overnight, or for at least 4 hours.
2. Drain the beans and put them in a pot with 4 cups of fresh water. Bring to a boil and cook until the beans are tender, about 1 to 1.5 hours. Add salt towards the end of cooking.
3. Once the beans are cooked, remove them from heat and keep 1 cup of the bean cooking liquid.
4. In another pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until soft, about 5 minutes.
5. Add the rice to the vegetable mixture and stir for a couple of minutes until the rice is coated and slightly toasted.
6. Stir in the cooked beans (with their liquid), thyme, allspice, pepper, and bay leaf. If using vinegar, add it now.
7. Bring this mixture to a boil, then reduce to a simmer. Cover and cook for about 20 minutes until the rice is done and tender.
8. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
9. Garnish with chopped green onion before serving.
Tip: For extra flavor, try adding a teaspoon of coconut milk to the cooking liquid! This adds a lovely richness. Enjoy your delicious Haitian Savory Rice and Beans!
