Keto Zucchini Bars 🥕
INGREDIENTS :
🥒 2 cups shredded zucchini, lightly packed
🧂 1/2 teaspoon salt, divided
🥚 2 large eggs
🧈 1/3 cup walnut oil, avocado oil, or melted butter
🍬 1/2 cup brown sugar substitute (like Swerve Brown)
🍦 1 teaspoon vanilla extract
🌰 1 3/4 cups almond flour
💪 1/4 cup unflavored whey protein powder
🍂 1 1/2 teaspoons cinnamon
🥄 1 teaspoon baking powder
🥜 1/2 cup chopped walnuts or pecans (optional)
🧀 5 ounces cream cheese, softened
🍯 1/2 cup keto caramel sauce
🍦 1/3 cup powdered sweetener (like Swerve Confectioners)
✨ 1 teaspoon caramel extract (optional, for extra flavor)
INSTRUCTIONS :
First, prepare your zucchini. Place the shredded zucchini in a colander, sprinkle with 1/4 teaspoon of salt, and toss gently. Let it sit for about an hour to naturally release excess water. After an hour, give it a good squeeze to remove any remaining moisture – this helps keep your bars perfectly moist, not soggy!
While the zucchini drains, preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch metal baking pan.
In a large mixing bowl, whisk together the eggs, oil (or melted butter), brown sugar substitute, and vanilla extract until everything is smooth and well combined. Gently fold in your drained zucchini.
Now, add the almond flour, protein powder, cinnamon, baking powder, and the remaining 1/4 teaspoon of salt. Mix until the batter is smooth, then stir in the chopped nuts if you're using them for that extra crunch.
Pour the batter evenly into your prepared pan. Bake for 15 to 20 minutes, or until the edges are golden brown and the center feels just firm when lightly touched. Let the bars cool completely in the pan while you make the frosting.
For the frosting, in a medium bowl, beat the softened cream cheese with the keto caramel sauce until wonderfully smooth. Then, mix in the powdered sweetener and caramel extract until the frosting is light and fluffy.
Once the bars are fully cooled, spread the delicious frosting evenly over them. Cut into 16 healthy, delightful squares and enjoy!
