🎄🍪 Christmas Kitchen Sink Cookies 🍪🎄

Ingredients:

1 cup (225 g) unsalted butter, softened

3/4 cup (150 g) granulated sugar

3/4 cup (165 g) brown sugar, packed

2 large eggs, room temperature

2 teaspoons vanilla extract

2 1/2 cups (315 g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup red and green M&M’s

1/2 cup crushed pretzels

1/2 cup toffee bits

1/2 cup chopped walnuts or pecans (optional)

Directions:

Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream Butter and Sugars: In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy.

Add Wet Ingredients: Beat in the eggs one at a time, then mix in the vanilla extract until fully combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

Combine: Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.

Add the “Kitchen Sink”: Gently fold in the chocolate chips, M&M’s, pretzels, toffee bits, and nuts (if using).

Scoop Cookies: Scoop 2-tablespoon portions of dough and place them 2 inches apart on the prepared baking sheets. Press a few extra toppings on top for a festive look.

Bake: Bake for 10–12 minutes, or until the edges are lightly golden and the centers are still soft.

Olive Cheese Bread

Ingredients

1 loaf French Bread
8 oz. weight Pimiento-stuffed Green Olives
8 oz. weight Black Olives
2 stalks Green Onions scallions
1 stick Butter Room Temperature
1/2 c. Mayonnaise
1 lb. Monterey Jack Cheese Grated

Method

Preparation
Chop black and pimiento-stuffed green olives, then thinly slice the green onions.
In a mixing bowl, combine butter, mayonnaise, cheese, chopped olives, and green onions; stir until well combined.
Spread the mixture evenly onto French bread that has been sliced lengthwise.
Baking
Bake at 350°F for 20-25 minutes, or until the cheese is melted and lightly browned.

Lemon Raspberry Layered Pie
Ingredients:
1 cup granulated sugar
1/4 cup cornstarch
1 1/2 cups water
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
3 large egg yolks, lightly beaten
1/2 cup fresh lemon juice (about 3–4 lemons)
1 tablespoon lemon zest
2 tablespoons unsalted butter
For the Raspberry Layer:
1 cup fresh or frozen raspberries
1/4 cup granulated sugar
1 tablespoon cornstarch
2 tablespoons water
For the Topping:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Fresh raspberries and lemon slices for garnish (optional)
Directions:
Prepare the Crust:
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
Bake for 8–10 minutes, then let it cool completely.
Make the Lemon Layer:
In a medium saucepan, whisk together the sugar and cornstarch. Gradually stir in the water until smooth.
Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble.
Slowly whisk about 1/2 cup of the hot mixture into the beaten egg yolks, then return the egg mixture to the saucepan.
Stir in the lemon juice, lemon zest, and butter. Cook for another 2 minutes, stirring constantly, until thickened.
Remove from heat and pour the lemon layer into the cooled crust. Refrigerate for at least 1 hour to set.
Make the Raspberry Layer:
In a small saucepan, combine the raspberries, sugar, cornstarch, and water. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens, about 5 minutes.
Strain the mixture through a fine mesh sieve to remove the seeds if desired. Let it cool slightly.
Spread the raspberry layer evenly over the chilled lemon layer. Return the pie to the refrigerator to chill for another hour.
Prepare the Whipped Topping:

½ teaspoon salt
½ teaspoon baking powder
¾ cup crushed pineapple (drained)
½ cup coconut milk
½ cup sweetened shredded coconut
3 cups all-purpose flour
2 ½ cups granulated sugar
1 cup unsalted butter, softened
¼ cup pineapple juice for a non-alcoholic version

For the Glaze:
2 tablespoons pineapple juice
½ teaspoon vanilla extrac
2 cups powdered sugar
3 tablespoons coconut milk

For Garnish:
½ cup toasted shredded coconut

Preparation
Step 1: Preheat the Oven
Preheat your oven to 325°F (163°C).
Grease and flour a Bundt pan or round cake pan to prevent sticking.
Step 2: Prepare the Cake Batter
In a large mixing bowl, cream the butter and sugar together until light and fluffy (about 3-5 minutes).
Add eggs one at a time, mixing well after each addition.
Stir in the vanilla extract, coconut extract, and rum (or pineapple juice).

Apple Cider Cookies Recipe

Ingredients

1 1/4 c. salted butter (2 ½ sticks), at room temperature
1 c. apple cider
3/4 c. packed light brown sugar
1 c. granulated sugar
1 large egg at room temperature
1 1/2 tsp. vanilla extract
2 3/4 c. all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. kosher salt
1 tbsp. plus 2 teaspoons apple pie spice

Method

Instructions
1. Melt 1 stick of butter in a medium saucepan until golden brown and foamy, then immediately transfer it to a stand mixer bowl and cool to room temperature for about 30 minutes.
2. Meanwhile, bring 1 cup of apple cider to a boil in a small saucepan, then reduce to a brisk simmer and cook until it is reduced to about ¼ cup (10 to 15 minutes), then remove from heat and cool.
3. Preheat your oven to 350˚F and line two baking sheets with parchment paper.
4. Add brown sugar, ½ cup granulated sugar, and 1 stick butter to the cooled brown butter in the mixer; beat on medium-high until fluffy and lightened in color (2-3 minutes), then add the egg, vanilla, and reduced apple cider on low speed, scraping the bowl.
5. In a separate medium bowl, whisk together the flour, baking soda, salt, and 2 teaspoons of apple pie spice; gradually add this dry mixture to the wet ingredients on low speed until fully incorporated.
6. Scoop the dough into 3-tablespoon-size balls, spacing them 3 inches apart on the prepared baking sheets (6 balls per sheet), and reserve the remaining dough.
7. Bake the cookies for 12 to 14 minutes, rotating the pans halfway through, until puffed and just barely set; cool on baking sheets for 5 minutes, then transfer to wire racks to cool further, repeating with any remaining dough.
8. In a pie plate, whisk together the remaining ½ cup granulated sugar and 1 tablespoon apple pie spice. Directions:

Fill the Glass: Fill a tall glass completely with ice cubes to keep the soda extra cold and refreshing.

Add the Soda: Slowly pour the chilled cola or Dr Pepper over the ice, leaving a little space at the top.

Create the Coconut Kiss: Drizzle the coconut cream over the soda. Let it swirl naturally through the drink.

Add Lime: Pour in the fresh lime juice to add a bright, citrusy kick that balances the sweetness.
