SUPER EASY
Coconut SWEET Potatoes! 🤩

💟 4 Large Sweet Potatoes or Yams

💟 1 Can of Organic Coconut Milk

💟 1 TBSP Fresh or dried Thyme - chopped fine

💟 1 TBSP Fresh or dried Rosemary - chopped fine

💟 Salt

☀️

1️⃣ Fill your favorite pot with water, add a pinch of Salt, and bring to a boil.

2️⃣ Peel and boil your potatoes for 20 minutes or until fork tender.

3️⃣ Meanwhile, heat a small sauce pan with 1/4 cup Coconut Milk and sauté fresh Thyme and Rosemary for 10 minutes, stirring occasionally. After 10 minutes, add another 1/4 cup of Coconut Milk and heat through.

4️⃣ Drain potatoes, and in the same pot, pour in your warm, herbed Coconut Milk.

Purée until smooth and add Salt to taste!
